Found a University of Oklahoma chemistry of beer class (free) via HBF. Cool ! http://www.homebrewfinds.com/2013/11/great-deal-reader-tip-16-college-level.html?m=1
I'm signed up, which is surprising, considering how I previously swore to never go back to school again...
They had me until I read that I'd be using my previous knowledge of organic chemistry, they're setting me up for total failure.
from what I can tell, this is a 101 level course. many, most? of us are probably way ahead of this class. we already know most everything about how beer is made, the process, starch conversion, fermentation, sanitation, etc. when I see a how to homebrew book I will pick it up and quickly realize that 90% of the information has been written about in a few dozen other books I have already read and understand. the remaining 10% is what I am interested in and there are books for that. but if it approaches a Siebel or UC Davis level, then sure, totally worth the effort for free.
