"Must Cellar" Beers

    I have recently started cellaring with intent! I was hoping to glean some wisdom from BA Vets...what would you consider a "Must Cellar" beer and why?

    Bigfoot and Double Bastard. Both age well and should be easy to get every year.

    Beers with brett tend to vary greatly depending on when you open them. They're worth buying 3-4 of and cellaring/opening them at different times.

    My 'Must cellar' beers tend to be the ones that are too sweet fresh, at least for my taste. In that category I would put 120 minute, World Wide Stout and most barley wines. There are also some beers whose taste improve with age that I think it would be a shame to only taste them fresh. In that group I would put Bigfoot, and Avery's Samuels, Mephistopheles, the 120 again and others. So you can see I mostly age Barleywine style beers for long term (I had a 1995 Thomas Hardy a while ago that was still going strong).

    Some stouts and high alcohol beers I like to age for shorter periods because it seems to cool down the heat and balance the flavors more. I think that GIBCS improves with at least a year on it. I have some Bolt Cutters and Sweet Repute put away, and I think they are going to be a lot better than people realize in a year or two. I already had one Bolt Cutter with a year on it and it was a vast improvement.

    That makes A LOT of sense. I hear what you say about the 120 and WWS! Those were the only ones I aged in the past...mostly because they were so freaking expensive, that I wanted to make them last!

    Does anyone prefer Dark Lord fresh? I'd vote that one a must-cellar.

    DFH Olde School Barleywine is a must cellar for me since it tastes like jet fuel fresh!

    Ommegang Three Philosophers. Great fresh, but is amazing with some age on it.

    These are a few things I have sitting and all take well to sone age.

    Had a 2003 120 minute tonight. It was great. Still a bit sweet, this monster has legs. Hope to try one in another ten years.
