SMASH, 2 5 gal batches, everything same cept yeast...?

    I realize you have your beer set this round (other than yeasts, I suggest 1469 and 1968), but for the next round go for Pils, Saaz, and then split one to a lager strain (or Cal Common strain if no temp control) and the other half on te Dupont saison strain and keep it warm.

    A really good read, with some great ideas. I really appreciate it! The more you know/read has an impact on your overall process/product. My brain is a sponge right now for all things brew related. Im pretty ridiculously obsessed with it all.... and I love it. :sunglasses:

    No dice hoss, No excuses. I can still type really fast with nearly poifect spellin' and punctuation when I'm drunk. It's the content that spews forth from my ever-gaping pie-hole that becomes an issue when I'm drunk. Social filters going out the window and all that*. :rolling_eyes:

    For an American pale ale, I'd use US-05. It's a perfect, easy to use, clean tasting yeast. Hop anywhere from moderately to liberally to "hey al, can I borrow your shovel?"

    For English, there are choices. But S-04, IMO, would be great for a maris otter smash. Noble hops = good. Fuggles, 5 oz, willamette, 6 oz, other nobles, 4-5 oz, most of it late for all, IBUs about 30-35.

    Well that's what I'd do at least. But it's your beer, do what you want. Consider the replies but make your own decision. It'll be just fine.

    While Fuggles and Willamette are more similar to noble hops than they are to high alpha pacific northwest hops (for example), they're not considered noble varieties. Noble Hops: Hallertauer Mittelfruh, Saaz, Spalt(er), Tettnang(er).
