    Bill would lead some Ein Prosit several times during Oktoberfest, but you're right, the rest of the place didn't scream Germany/Austria or anything European.

    I’m not sure if I can pinpoint what’s wrong with the tasting room, but I agree that it isn’t very lively. The staff typically seems like they’d rather be somewhere else.
    I think it’s a place that would be better off in the ‘burbs with a more chill audience other than the one in LODO. Location matters when it comes to your clientele. There are at least 2 places producing mediocre beer not far away and doing pretty well. Why? They know their audience. They care about fun and an atmosphere more than they want a finely crafted traditional beer.

    In a perfect world, Prost seems like a place that would fare well in downtown Littleton or one of the suburban "old town" areas. Downtown just seems like an odd fit. Plus, German food and beer are a pair that shouldn’t be separated. Big pretzels, schnitzel, obatzda, kartoffelpuffers, leberkaese, etc. might as well require beer as a pairing. You rarely see anyone drinking more than a glass over there without food and vice versa. Every biergarten, hall, and brewery serves food without question, too. Partnering with a restaurant would be something I’d look into if they haven’t already.

    To their credit, they do have the sausage guys out front most of the time now, and the food truck is doing things like beer brats with sauerkraut. Plus, the pig roast for the Anniversary week was pretty awesome.

    Don't care if they get Bin Ladens ghost to brew there, if the beers stay the same I'm in. I love there patio in the warmer months.

    The patio is key. Great spot in the warm weather, for sure.

    Today Prost announced that their new brewmaster and head of brewing operations is Larry Leinhart.
    Per some quick searches, it seems he was a brewer with A/B for years and has brewed at FCB and New Planet.
    Seems promising to me. FCB used to be very German-centric after all.

    I like the hire of an AB brewer. He should be perfect at replicating a recipe which is exactly what I want. Bill had it dialed in and this guy should be able to follow that exactly.

    I was just going to say something along these lines. Seems like a smart idea to higher an ex-AB brewer. They may not put out good tasting beer, but it is always quality controlled and consistent.

    Agreed. Consistency and perfection matter most. Plus, from a standpoint of making similar beers, the FCB rauchbier and maibock were some of the best in the country for a while.
    No clue where things will go from here, but I think this hire is about as good as any we could hope for. IMO, the only better option would be Eric Warner coming back...and that was a crazy pipe dream anyway.
