Mosaic pale/IPA

    It's not far from it. The 2012 crop was atleast. I still have some, and like to lay it in with something harsh and piney like. It's a bit sweet.

    However my 2013 crop of leaf and pellet aren't bad.. Kind of fruity and dank, with plenty of citrusy and sharp berry notes.

    Mosaic loves Rye.. The spice really lasso's it back.

    Two weekends ago I brewed an all Mosaic/Belma APA. First time using Mosaic; I bought 3 ounces on a whim while checking out a (sort-of) LHBS that I had not been in before. 2-row with 5% Victory and 5% Patagonian Crystal 35. OG = 1.061. Hop aroma coming out of the fermenter was as fantastic as any beer I've ever brewed. I'm not dry hopping, but I expect it will be real tasty. Will be at least several weeks until I keg. I'm looking forward to it.

    Well, my 2 Maris Otter and Mosaic SMaSH beers are in the kegs and are carbing up nicely. The only difference in the 2 beers is one I used 1056 and the other wlp002.
    Both taste great, and its cool to taste the subtle differences in them due to the yeast. The 002 didnt quite get all the way down, FG was 1.019. Not sure what happened there, but I like that one better. I posted a thread titled major batch sparge malfunction earlier, and described what happened with that beer. Maybe thats why I didnt get down that low? It was done fermenting in like 3 days, dropped out like a rock. Solid steady gravity readings 3 days in a row.... 1056 got down to 1.012. Both OG 1.060. Made starters for both.
    I put 6 oz Mosaic in each beer, and Im not getting much out of them yet. Theres like zero bitterness, and a lot of fruitiness. This hop really needs a friend to play with. Im suprised at the mouthfeel and body just using the one malt. Im really glad I did this experiment cuz I really feel like I know these ingredients well now.
    For this being my first attempt at all grain and kegging, Im really damn impressed and I learned so much. Turned out better than expected.
    Mosaic probably shouldnt be used by itself, it has zero bitterness. Its got a lot of fruit going on, can put my finger on specifics. Needs something harsh to compliment it.I still might toss an oz more of Mosaic in to dry hop the kegs.... maybe. Very unique hop.
    Anyway I just thought Id give yall an update on how this turned out.

    Agree with the fruitiness, but also onion. Pretty sure its from the mosaic, just try victory hop ranch and southern tier 2Xone. Did an IPA with nelson and mosaic, really clashed, but a bunch of people praise it for being unique... I think in small amounts it might be a nice contributor, though.

    Another onion comment, boy am I glad I dont get that taste! I hate onions haha. Victory Hop Ranch is one of my favorite beers, I thought it tasted like pineapple juice! If Im not mistaken its Mosaic and Azzaca. I wish my beer tasted more like that.
    But my hops are just barely making an appearance, theres some small fruitiness, (the good kind, not like candy) But I was just expecting more. Tomorrow its been 2 weeks since I brewed the 1056, and Tuesday makes 2 weeks for the wlp002... Ive read in some places that it takes a few weeks for the hops to really come out and shine, but Im skeptical. Maybe I should just throw an oz or two in to dry hop and see what happens.


    BTW, to everyone who doesnt keg their beers, why?! Its so great! From grain to glass in less than 2 weeks is really quite something. LOVE it.

    I imagine cost is the limiting factor...that's why it took me a while to do so anyway.

    Tasty sample certainly seemed somewhat similar to Simcoe and sumpin'else.

    i did a mosaic smash pale ale w/2-row and loved it. maybe my favorite beer i have brewed to date. it is kind of sweet in the same way i might describe some lagunitas beers as kind of sweet, but i actually liked that about it.
