Farmhouse Breweries to Watch

    We had one open up last year in Charleston called Freehouse. Supposedly they make a decent saison.

    Yes, Keene, in PA "farmhouse" is pretty much self defined. I think it starts with homegrown water.

    For a simple answer, farmhouse ales use a particular kind of yeast that has a bacteria content that provides the characteristic taste. A farmhouse brewery seems to me to just mean a small local brewery, that maybe tries to use local ingredients sometimes.

    The brewery isn't actually up yet, should be in about 2-3 months I think. He's bottled one beer for backers, but most of his stuff has been had at beer tests throughout NC.

    Trillium in Boston is certainly not located in a farmhouse but makes lots of awesome farmhouse ales.

    I had a Block 15 beer at What the Funk that was god awful full of enterobacteria (read baby diaper). It was by far the worst beer that I tried that night. I couldn't believe they would have submitted a filthy beer like that to such an important event. All the sour/farmhouse geeks were out in force that night.

    I hope that is not representative of all their beer as I really liked the podcast of them on the Sunday Session awhile back.

    So I guess this is the first time this is being mentioned on this website...

    "Intangible Ales"

    Terry Hawbaker (of former Bullfrog fame and current mother funker in charge of fermentation at Pizza boy brewing) has a new project/venture with a concentration on brett fermented brews. Soleil Reverie is the first beer released in collaboration with Saint Somewhere. (It landed in bottle and draft form in philly this week and was at Hunahpu day.)

    Should be a whole bunch of exciting stuff to come in bottled form. This might be the answer for those of us who might have been frustrated by the on-site consumption of Terry's work at Pizza Boy.

    I've seen a couple mentions of Sante Adairius. While I absolutely love their saisons and wilds, the whole "rustic" part of their name kind of annoys me. When you have that in your name yet normally have half or more of your menu as IPAs, porters, stouts, etc., it doesn't quite work. I get that the "rustic" is more of a philosophy of the brewing, it just irks me. End of rant.

    Now, people have mentioned plenty of the best. The "favorite breweries" list in my profile is pretty much lambic producers and farmhouse breweries.

    It's really hard to limit my "favorite" farmhouse breweries to a few, so I'll just say that I'm absolutely shocked that Jolly Pumpkin is yet to get a single mention in this thread!

    haha...yea. But that's kind of why I love them! So inconsistently inconsistent!
