I believe from what I have read is that there are 3 different versions of the Mexican Cake. Red Wine, Apple Brandy, and Barrel Aged Bourbon. Does anyone know when each version will be released this year? (2014) Also, how many bottles of the Barrel Aged Bourbon are allowed at the brewery?

Those are the variants from last year's release, this year there will be a release of regular, non-barrel aged Mexican Cake, and then Tequila and Four Roses barrel aged variants.

Oh wow, very cool. Thank you for this information. I was at the brewery on in March of this year ( I live in New Mexico) and was fortunate enough to taste the Gose, Siberian Black Magic Panther, One Claw, IPA and Shane's Big DIPA. They were all great beers. From what I have read most of the variants were available in most bottle shops excluding the Bourbon Barrel Aged Mexican Cake. It was only released at the brewery. Do you know if that is what will happen again this year perhaps with the Tequila Aged Mexican Cake? Any idea on the release dates?

The MC variants weren't released in shops at all only at the brewery. Panther variants saw limited distro. You will have to go to the brewery for the 4 Roses and Tequila MC later this year.

Brewery only and there'll be 3 variants: Tequila, 4 roses (bourbon) and ?????? Non-barrel version will be available at the brewery (one case (12/22oz) limit per person) and throughout the state.

I believe it's only shown up a few times... was at Brewvival 2012 and at the BA cake release, but small pour only

    more than once.

I don't think that is it. Anyways, you can make your own Mexi coffee cake, as Mike described on here a while back. They basically just drop a bag of coffee beans in a keg of MC. Personally, I think coffee would ruin the mesh of flavors in the BA versions.

A bag or WHOLE coffee beans? Not ground? How do you expect to flavor anything with that?
