Agreed. Good beer, surprising amount of watermelon flavor, light on the lavender, refreshing, not sour at all though. Still an excellent summer beer for Tejas

So you are tasting exactly the opposite of the brewers description of light watermelon and very sour?

I believe that's what I posted above. The other 10-12 guys I was with that had the same bottle and all had pretty similar sentiments. Dunno if it was the bottle or what, but it had a very nice watermelon flavor to it and almost no tartness/sourness at all.

Must be the first time in the history of beer that palates aren't picking up what brewers say they should...

Yeah, 3.3 ph beers usually have no sourness....

I don't want to turn this thread into a back and forth argument so I will just say again that roughly a dozen guys had this beer less than 18 hours ago and we all thought it was great but had very little if any tartness, if any (and sure as heck no sourness). Maybe it was the bottle we had, dunno. All I can say is that if this beer is more sour in other bottles than the one we had, then it'll be delightful.

Have you had the beer yet?

    Classic greenspoint.

Serious though, the beer is good. Watermelon and cucumber water good.

I ran out for a quick pour & some bottles. In one word - refreshing! This will be a great summer beer if it lasts. Definite watermelon, but not in your face.

I caught tons of lavender and spearmint in my pours. Plenty tart and refreshing. A+

Hearing about seven cases moving at a time does make me a little regretful about the no bottle limit. Our rationale for no bottle limit is based on a number of factors. First, we prefer to sell most of our beer at our brewery. In prior posts we've pointed out that we lose around half the value of the beer by having it distributed. Selling onsite has already done wonders for the people and equipment we've been able to add to our brewery, and I think has made us a better brewery during the last 10 months in which we've been able to sell onsite. Second, we continue to have limitations with space for bottle conditioning. Once a batch is ready, it needs to leave our brewery fairly quickly so we have room to condition more beer. Which leads to the third point, Hibernal Dichotomous was a big batch for us and is taking up a lot of space. We blended about 60 barrels and have over 500 cases (750ml x 12) to sell. Granted, seven case chunks add up fast. But we expect this beer to be around at our brewery for at least three or four more weeks and for some to eventually be distributed.

So while hopefully it's clear why decided not to put any bottle limit on Hibernal Dichotomous, I hope we've demonstrated through our past actions (e.g. prior bottle limits, AR releases, MvB and Tempranillo release, etc.) that seeing our beer spread equitably among beer geeks is something that's important to us. For instance, as a lot of people on this forum know, we have batches of Atrial Rubicite, Nocturn Chrysalis, and Encendia that will be released soon. All three of these batches will have bottle limits (Encendia = limit 1, Atrial and Nocturn will likely be limit 1 or 2).
