Cellaring Prairie Saison/Farmhouse Beers??

    I'm sure most of us will agree that cellaring a Bomb! would be a detriment to the beer, but has anyone tried storing away any of their saisons/farmhouse beers? I tried to set aside an Ale, but ended up drinking it after a month or two.

    But currently I've got a Puncheon and a Birra hanging out in my closet. I'm assuming that out of the two, Puncheon will see some growth, but I'm unsure about the Birra.

    Thoughts? Anyone try this with one of the older, earlier Prairie beers? Regardless, they're all drinking great fresh anyway right??!

    I've only had Standard before but if either of those are brewed or conditioned with brettanomyces than they will be good for a year or two at least. I believe the Standard doesn't have brett in it but it was a great saison IMO. Would definitely buy again.

    Which is? Haha

    But if there is Brett in there it should get a little more interesting but I don't believe the style would benefit from extended aging. Saying this I have not done it so I can't say for certain.

    There is always a bunch of Prairie at the grocery store. Might grab a few to see how what will happen with some time. Not too much time, but enough for the Brett to play around with.

    Funky Galaxy does not get better with age IMO.

    I do it all the time. Some taste amazing with 1-2 yrs on em. Obviously some won't improve. Have done Logsdon and Boulevard Saison Brett both fabulous. Also some Anchorage.
