    I'm back after 3 weeks off. Doing a Belgian pale ale (2.5 gallons BIAB).

    5 lbs Belgian pale
    1 lb Munich
    0.25 lb special B

    .5 oz East Kent goldings @ 45
    .5 oz East Kent goldings @ 5
    1 oz East Kent goldings @ dry hop

    WLP510 Bastogne @ 66 - 70 F
    Brettanomyces B 1 week in.

    Not brewing, but pouring my "Pro/Am" Bo Pils at BrewFest on Saturday.
    Tasted it on Monday. It's a good beer, but is fairly different from the original. If anyone is going to the BrewFest in Manheim, stop by and say hello.

    I might brew one batch this weekend- all the stuff is out already, and I think I've got one open primary is all.

    Pale Ale with Simcoe/Centennial/Amarillo with Conan yeast or, Saison with ECY14 and might add some brett later.

    Haven't decided.

    Have a Wheat I can keg, a RIS I need to bottle off a keg. A stout I need to keg, and then I've got another RIS and a Kolsch that are fermenting.. Kolsch is slow as shit to finish up.

    No brewing again - honeymoon time!

    In 3 weeks or so I will hopefully be able to brew again... I think I can sneak 1 weekend of brewing in there before I have to move to my new place. Maybe Ill try to brew twice that weekend :slight_smile:

    No brewing. Judging our Club's REAL Ale comp tmro. Putting my dry hopped Saison in the fridge tonight (carbed warm with 1.5oz Amarillo. Need to pull the oak from my keg of Wee Heavy soon. Adding heat to my Brett Trios APA from last weekend to keep it going. Hoping to see a good krausen on my Vienna Lager from last weekend after 2 yeast pitches and lots of stress. I think the original brewery pitch was trub and dead yeast as it was quite dark and thick. The second pitch on Tuesday was much creamier and khaki colored. Airlock bubbling and yeast patches on top as of this morning (bung is super tight so it wasn't a lose bung and airlock issue, beer was super clear and no bubble in airlock, no OG drop when I sampled on Tuesday with fresh pitch).

    A patersbier is mashing right now, will be adding brett B to it after the 3522 krausen goes down. Tomorrow is a 100% Brett B Trois IPA with mostly Galaxy and Citra with some Amarillo in the dry hop, really excited about that one!

    Yesterday I moved to secondary a BSD I used 2 pounds of dates in, should be ready for the New Year. Also moved my Gulden Draak clone(OG 1.108!) into secondary after sitting on 2 types of yeast.

    I can finally and quite happily say... ME! Finals are over, time to brew beer and crank out the jams! These three brews will take place over the next 3 days, mixed in with a lot of jams and a lot of drinking beer! I've even got some homebrew that's ready, elderberry wheat V is drinking damn excellent, and imperial CACA is still not really carbonated enough (going slow, but it's going, no worries).

    Also bottled KISS amber extract + cascade smash got bottled today. Yield was 4 bombers, 5 12 oz, 1 7 oz test bottle. It was the last batch in my mr beer keg, which I noticed was cracked upon cleaning, so it's been retired to the recycle bin. RIP.

    Other than that, I mostly plan to drink beer, go fishin' with my bro and nephew, and slack off for the next 4 weeks. Except I have to pre-study for "foundations of mathematics." Oh, and I have to take the GRE and do a couple easy online lab safety courses online so I can work in the graduate labs (i.e. so that the school isn't liable if I blow up the lab and/or myself). :rolling_eyes:

    Anybody taken the latest version of the GRE? I've been told I'll ace the math because I've taken far beyond what it asks questions over (I've taken up to calculus III and linear algebra and several stats courses). I am not particularly worried about it, but I'll go over the book before I take the test anyway.

    Brew wise I'm brewing the APA stout (actually toasting the oatmeal right now!), another stout that I got from bbrown12, and I'm going to get the grain and do my first lager!

    Lager will of course be a smash with a moderate amount of hops. Anybody got a particular grain and/or hop they like for lagers? IBU level? OG? I might fudge the smash on the hops side, really I'm not that worried about it being a true smash, I just want a tasty beer. Possibly golden promise plus cascade and/or willamette. I suspect this light, refreshing lager will be ready by around labor day. :rolling_eyes:

    Pale Ale. OG. 1.056 IBU: 40 ish.

    Hope to get two more batches done before heading off to CA next weekend.

    Ground water temps here in SC are starting to creep up into the high seventies/ low eighties, making chilling a pain in the ass:angry:

    If you want a simple smash lager that ISNT boring.. Just keep it simple man!!!

    Get a good lager strain.. Czech pils, or German Ale and do Pilsner malt and saaz. You simply can't screw it up. Pilsner and saaz with a nice clean pils/german lager strain.. Man.. I want to brew me one now!

    Yeah, I put my thermapen in the hose water the other day after running it for 5-10 min.. 72 is about the best I can do with the immersion chiller. Thinking about getting another pump to push ice water, or just say to hell with it and put it in the chamber at a slightly lower fermentation temp over night and pitching in the mornings. I did that for my BCBS clone last week. 71 was as best I could get. Put it in the chamber to drop to 62, and pitched.

    Checked my tap with the thermapen last brew day, 52°...probably a little warmer now. :stuck_out_tongue:

    I'm also wearing shorts and flip flops to brew outside. :wink: Thankful that I have a large covered back patio with ceiling fans, because it's getting warm fast!!!

    I'd love 52* tap water though!

    Brewing a sour ale tomorrow with the remainder of the maple sap procured in VT recently. It will be fermented with ECY Bugfarm. Not expecting the sap to contribute anything special to the beer, but (based on it's now lower ph) the remainder of the sap purchased nearly a month ago already has something funky growing in it (lacto is my guess) so a sour ale is probably the only thing to brew with it at this point!

    Well there is a trade off. I will say that I wear flip-flops all winter if snow won't interfere...not so much to the shorts.

    Tap was 45° in the dead of winter. The downside being that the hot water for the shower doesn't last nearly as long.

    Mine feels waaaay colder than 45! I just finished my brew, with my 50' ribcage chiller it took 7 mins to get the wort down to 65:slight_smile:

    I'll be bottling and kegging on Saturday. A Kate the Great clone should hit the bottles and I'll keg a C hopped IIPA. I think I'll take a few notes and build up a starter for a Kolsch yeast. I'll definitely use it to make a Kolsch, a Berliner, and a cream ale. Maybe I'll finish it off with a heavy Baltic porter.
