Dry Hopping an American IPA

    I read a lengthy discussion over on HBT about different effects of pitching rates. In the experiments that generated the conversion, the underpitched samples actually attenuated slightly BETTER than the others. The thought was that since underpitching results in a longer growth phase, the subsequent higher portion of younger generation yeast was more able to attenuate. I'm certainly not advocating underpitching, but as vike said, attenuation normally won't be the concern.

    Bump up the temperature of the fermentor to 70F and see if it give so go the the yeast

    Mash temp was 152 consistently through the 60 minutes. added PH 5.2 stabilizer to strike water. I might just need to wait another week. Samples taste delicious. Recommend giving the primary a swirl to suspend some more fallen yeast?

    sounds reasonable. Is the sample Sweet? However everything rest on one question, Do you like the beer? if so don't worry and enjoy.

    It's not done fermenting yet. If he bottles now, he's going to be enjoying bottle bombs.

    I'm an idiot...... I didn't calculate my brix numbers from my refractometer......it went from 14 brix (1.056) to 7 brix (1.027) but I didn't do the calculation 14 BRIX to 7 Brix Is a 1.010 FG. 6%ABV. I did it!! Cheers!!!

    You're not the first to make this mistake. It illustrates why it's always good to provide as much detail as possible (in this case something like ..."I used a refractometer") when asking a troubleshooting question. Glad it worked out for you.

    I'd use a combo of cascade and citra in the dry hop. Maybe add Amarillo. I'm not a ff fan.

    I added an ounce of cascade, citra, and Amarillo. first time using amrillo..smells like tangerines. I like it.
