Seeking advice on brewing witbiers

    I'd say lemony/citrusy, but that's just me.

    The round coriander seeds taste citrusy to me as well. Thanks for your input.

    Marc, I have not brewed with the Indian Coriander you sent me. I typically brew my Wits in late spring for summertime drinking (a Wit beer is a tasty summertime beer for me). I hope to use the Indian Coriander in the next batch of Wit that I brew. As I mentioned in a prior post a brewpub local to me regularly (6-8 times a year) makes a Wit beer using Indian Coriander and I enjoy drinking it.

    P.S. I also want to thank you again for your 'tip' on using Wyeast 3463 for homebrewing a Wit; 3463 does indeed produce a tasty Wit!

    Yeah, I'm answering an obscure post on a thread that hasn't moved in forever, but sometimes the search function takes you EXACTLY where you most recently discussed a particular topic. Imagine that. Search. I could have just started a new thread! :rolling_eyes:

    But seriously I need a recipe to come together and was thinking witbier or hefeweizen, but saw your post about the jasmine "panty dropper" blonde... I could theoretically just make my blonde ale (tried and true) and do some jasmine tea...... how much tea, and how/when do you add it? Any particular common variety of tea preferable? I really like jasmine tea and I really like the idea of having "panty dropper" ale for an upcoming party!

    And what about the idea of a jasmine (or lavender, or similar flowery herb) blonde ale done with S-04? Sort of an English herbal blonde? I think I've used S-04 on this basic recipe (sans the herbal stuff) and it "works."

    I dunno, I'm tired and a little lightly drunk and I'm just kinda brainstorming here...

    But a witbier would also be fantabulous, jasmine witbier sounds like a real ladies' brew too. What yeast would you use? Thoughts?

    For our beer, we use Jasmine Jazz tea leaves. For 5 gallons, an ounce with about 5 minutes left in the boil and another ounce with dry hops after fermentation.

    Grainbill is pretty straightforward: just 2-row, some biscuit and cara-pils. Hops, I believe, are mostly Cluster with some EKG's for a more earthy tone that I think works well with the jasmine. Fermented with WLP001. Just a heads up, this beer is cloudy, even after attempting to clear up with gelatin. But yeah, panties be droppin' all over the place so hard you'll have to patch the holes in the floor.

    For a witbier, we like WLP410 Belgian Wit II, which is a seasonal platinum strain that is out right now, so I would probably try it with that if I were so inclined to attempt such a beer.
