Swedish brewery doing (lambic-like) spontaneous fermentation?

    I heard something about a Swedish brewery doing a spontaneous fermentation beer, like Belgian lambic (in fact possibly with some input or advice from Cantillon). I also heard a cryptic reference to this mysterious producer using bread and/or soy (possibly to culture ambient yeast, I can only imagine).

    Does any of this ring a bell?

    The beer is most probably "Grand Crew" by Malmö Brygghus. As for the bread/soy, I have no idea.

    Aha, it turns out to be Brekeriet. I may have misunderstood the bread or soy thing (let's hope?), but verified that Cantillon has given them some info or input about spontaneous fermentation. It's coming...

    Brekeriet is probably Sweden's most intresting brewery right now. They seem to do everything right... Great stuff.

    That sounds interesting but a tough one to find outside Sweden or the Mikkeller bar. Any Swedish BA who can hook me up, let me know?

    Sunnrider, you can find Brekeriet in Spain. I know for sure. Actually you can buy them in Madrid and Valencia. If you need help, contact me, I´m the distributor for Brekeriet in Spain. Cheers

    Ølbutikken in copenhagen atleast got one of theire rare beers Cassis onsale, then know if Mikkeller & Friends still got instock

    I have some Cassis on the way now, along with Funstarter and a Saison.
    @ManforallSaisons we should compare notes. Really looking forward to trying these.

    Updated holiday plans are: Stockholm, Malmo, Copenhagen and Gotenburg.
    I´ve already sent a begging letter to Ølbutikken to see if they would hold a Blåbær until then, at least to be able to try it onsite.

    In stockholm you have Akkurat, best bar in the world for lambics, in Malmö you have the two best breweries right now in Sweden, Malmö Brygghus and Brekeriet and Copenhagen is Copenhagen!

    I had the Brekeriet beers and loved them, especially the saison and Cassis. I kept one bottle of Cassis to age it for a year or two, I reckon it´ll be incrdible then. In the meantime I´ll be grabbing a few more. Really recommended if you like your lambics.

    Ølbutikken were great, there´s no chance of reserving "you know what" this year but hopefully I´ll get to try one while I´m there. In any case it´s a place I´ve wanted to visit for years, along with Akkurat in Stockholm. Although I´m scared what´s going to happen to my credit card once there.

    Best thing about Akkurat is that it is not that expensive.
