Your favorite three styles to brew and why

    I think we have a very similar thought process regarding commercial beer and our abilities to brew to our exact liking at home

    IPAs: Love to drink, play with hop combos always a beer I crave.
    Sours: Experimentation, Cost Savings, Set it and Forget it.
    Sessions beers of any kind: Dark, light, malty, hoppy, as long as it is in the 4% ABV range i'm thrilled.

    Hefeweissbiers, Tripels, and Quads. I love yeast!

    Although brett Trois IPA's are becoming a new favorite!

    What ales me about English Browns, :wink:, is that they are usually icky sweet. I just brewed a Northern English Nut Brown ale. Do you have any good advice for a Southern Brown? I'm thinking something a little lighter than Bells Best Brown.

    I usually let them sit in the fermenter for 4 to 5 weeks. They seem to get to a sweet spot in the keg after an additional 3 months. It tastes like a lager. The Kolsches that I'm making are ALWAYS kind of like a Dortmunder or Helles around 4 months. They just have that kind of sweet undertone of pils malt.

    I pulled a few bottles aside from the fermenter and let them sit for an additional few months. They tasted more like a Bavarian Lager. Just crisp, dry, and sort of bitter.

    IPA's, Saisons, Dark Milds, and Kolsch beers (sue me I posted 4) are my "go to beers" although I agree that dry Northern English Nut Brown's are awesome!

    Pale ales. APA, IPA both fall into this category for me along with DIPA. I love the fresh hop presencd that only seems achievable through homebrewing. Somehow by beers have twice the hop presence of commercially available options.
    stouts. I love stouts, and enjoy brewing them as well.
    Saison. Again, another style that I adore. I really enjoy the juicy and hoppy brett versions and feel I can do at home what I can buy in stores. I have a hoppy grissette on deck as I type this.

    Hmmm... sounds like you like your brown ales less sweet than per the guidelines. In that case, I'd say ignore them. Go relatively easy on the crystal malt(s), and instead go a little roasty by getting most of your color/flavor from chocolate malt(s) and by adding a very small amount (a fraction of an ounce in a 5 gallon batch) of roasted barley or black patent. You can get away with this if you keep the amount very low and leave room for it by excluding an equivalent color contribution from crystal.

    Of course, mashing for higher fermentability could help too.

    Pale Ales/IPAs: Never not good to drink

    Saisons: I love how open the style is to interpretation, and most of the commercially available ones aren't that awesome (to my palette)

    Porter: Just extremely satisfying, a fair range to play around in, and can take certain flavors well

    I brew more Pilsner then anything else. I like them year around.
    E.S.B's is probably #2 just an easy drinker.
    Barley Wine would have to be #3. Nothing better then having a pint of E.S.B. with a friend and splitting a Bottle of Barley Wine!

    Koelsch: Wife and her friends love it.
    Rauchbier: I love it.
    Kellerbier: Something no one is really doing right here in the U.S., so it's a nice challenge.

    Tough one... but I think I found a way to cheat the answer.

    Here are my three favorite styles to brew.

    Smaller refreshing beers: Wheat, PA, Kolsch, Mild, Bitter, Pils, Vienna, Saison (I prefer small over super), maybe AK
    Intensly hoppy beers: DIPA, IPA, PA, Stout
    Big keeping beers: Quads, Tripel, Dubbel, RIS, Porter, Dopple, Old Ale, Malt Liquor (imperial pils)

    IPA's-summer
    DIPA - winter
    Sours- all year
    Stouts - Fall/winter

    English Dark Mild - easy to brew, easy to drink, easy easy easy.
    Saison - Super flavorful and the style is wide open to interpretation
    Kolsch - When brewed properly, it's the beer that beer geeks and non-beer geeks can enjoy together

    Something hoppy with Brett Brux Trois
    German Lagers (Helles, Pils, Dunkel, Schwarzbier, doppelbock)
    Sours. Mostly as a cost savings and it's becoming increasingly easy to forget about a beer for months on end.

    Saison because they are cheap to make and you have a lot of room to play with them.
    IPA because I still haven't made one as good as Alpine's.
    Brett beers because I have been obsessed with brett flavors for the past year. I hope to get over it soon.

    I'll add that, despite having some success with the Averagely Perfect IPA, I tend to feel like I am wasting hops when I brew IPAs. I just don't drink 6%+ beers often enough to justify the expense of hop flavors that are going to fade before I finish drinking the keg. This is a style that I will likely drink more commercial beer by volume than homebrew. In contrast, good milds and bitters in the US are hard to find, so in these cases, brewing something that I like to drink is the only way I can get to drink it. Same goes with saison, to some degree.

    I like porters, and their cousins.
    Milds old ones from Ron's book is all I brew.
    Stock ales
    Saisons I am trying now.
    Just brewed a fest bier....no idea how good yet.
    seasons dont matter much here, nor do I drink "types" of beer because of the weather....
