Ever have a great Dark saison?

    The only one I've ever had was the Stone collab....wasn't a fan.

    Been mentioned once before in this thread but Hill Farmstead's Phenomenology of Spirit (2013) is definitely it. Civil Disobedience #8 doesn't come all that close to the goodness of PoS.

    My first Dark Saison and only was my own. I wasn't the biggest fan of it but others were. They loved it. I have no idea who makes one commercially. I will however scroll up and see what the fellas have had. I just figured I'd pipe in and tell you my experience. The one I did, I used chili peppers in it and I did use a white labs saison yeast. It was the number 2 version. I added peach extract in the keg which totally threw off the funky saison yeastiness. I would probably half it next time. I used midight wheat in it to darken it up. It didn't take but a half pound to make it dark. I would def recommend using it cause it does not impart that bitterness from grains like a chocolate or black patent malt would

    oh its ok. Sometimes I love to chat about this stuff, not that its really important, but its impossible to do it well in forums.
    For 1 thing I am not a good writer, I can chat about this better (in person), than I can write about it.
    Still I do try to get a point across. Hopefully a good one.:grinning:

    try to find some GI Pepe Nero before its all gone. ive got a few bottles of 2011 left in the cellar that im hoarding...love this beer!

    50% wine barrel-aged Guillemot by Tired Hands is quite possibly the best beer I've ever had. So this can be a great style if done right.

    It wasn't called a saison, but it sure was a hop and yeast driven dark ale.
