    If anything dextrins are a more appealing source of food for microbes. However, I didn't really enjoy the flavor that resulted from adding oats to the boil

    I really wanted to go this route, but I've got 2 pounds of flaked barley that needs to go into the Dry Stout. That will probably do best in the mash. I don't think I want it in the Oatmeal Stout

    Of course, thus the need for good sanitation procedures. 5 gallons of my Wit that I did the oatmeal in was fermented with WY 3726 Farmhouse and another 3/4 gallons got the 3726 and RR Consecration dregs. Bleneded and bottled at 4 weeks old, and aged in the cellar for 2 years. Had a couple this summer, light tartness, peppercorns, gummy bears, citrus, pineapple, touch of funk. Actually surprised with how little funk and sour there is in this beer after 2 years @ 60*F and all the starches. No gushing either.

    Cleaning kegs,
    Cleaning tap lines
    Taking a bottle inventory
    Forced diacetyl test
    Checking SG's
    Bumping up 3 saison starters
    Maybe cook up some Invert #2

    No brewing, I did my first gallon batch last weekend. I'm debating on dry hopping towards the later end of next week...

    As it stands I boiled 1/2oz Fuggle at the start of the boil, 1/2oz Huell Melon at the 20 minute mark and 1oz. Cascade at the 35 minute mark.

    Thinking of dry hopping my small 1 gallon batch with Chinook or Zeus whole hops (that's what I have on hand.) Any thoughts or suggestions would be appreciated on which one would go best, if any...and how many oz/gallon I should go with!

    Planning on 100% Galaxy. I've got about 2/3 pound of 2013's crop that I need to finish off.

    I'm hoping the Trois emphasizes the tropical fruit tones...I'm just a bit nervous about going solo with Galaxy, though, since I've read somewhere that Galaxy can throw a diesel-fuel character if you're heavy handed with it.

    Imperial Chai Pumpkin Ale on Sunday.
    2.5gallon batch.

    Never brewed with tea, going to give it a try!
    Chai tea and pumpkin spices are very similar, think it could work.

    That sounds tasty. There was a great article several months ago in BYO about 100% Brett trois IPAs. One of the recommendations was to save some hops for dry hops since Brett has a tendency to "rewrite" hop flavors during the fermentation. Also recommend to pitch bigger and give extra days when making the starter.

    Thanks for the heads up about the BYO article. I'm planning on withholding 3 oz.'s for the dry hop, and I'm using the recommended lager pitching rates…but with the Brett's absolute refusal to floc out in my starters, I'm probably going to be pitching a bit under my target rate.

    Oops, change of plans...going to Zwanze Day at Crooked Stave now instead. Guess the last brew-before-baby was last weekend. Oh well.

    Currently fermenting my Backyard Black Harvest IPA. 3:1 Cascade to Chinook, 3 pounds total wet hops.

    No brewing this weekend, just some kegging and dry hopping. Also heading out to pick blackberries for future Berliner Weisse.

    Only brewing related activities this weekend are periodically looking at my 2-week-in-the-fermenter pale ale and perhaps getting around to picking the Cascades. The 2nd activity will depend upon how many other weekend tasks I can get crossed off the list.

    Great day brewing today. 1858 Tetley's A Pale Ale. Hit OG target. But also hit hallway wall with carboy. Shattered glass everywhere. 6 gal of wort on hallway floor. Damn.

    Brewed my first beer (and IPA) with brett b trois and I used galaxy and mosaic. Turned out incredible. The yeast works wonders with the hops. Good luck!

    EDIT: I also severely underpitched the brett. I was unaware of the cell count being so low, so I only did a 500ml starter for 36 hours. Pitched the whole thing in. That said it was very forgiving and even medaled in a competition. I wouldn't sweat too much under-pitching.
