I'd use all light DME and cut the crystal back a tad...and up the others to get your SRM

    Looks pretty good, though

Why the mix of LME and DME? Why the pound of 2 row? You know that can't be steeped, right?

You still have Dark LME. I'm always a little skeptical when I see dark extract combined with crystal and roasted grains. Undoubtedly, that extract is dark due to some combination of colored crystal malts, roasted grains, and low flavor colored extracts similar to Sinamar. Something is making it dark, right? If you do not know how much of what, added more darks grains onto that is, well, a shot in the dark? This is what GreenKrusty and others like me would recommend using a light extract for your base grain and then build your color and flavor around that with specialty grains, giving you greater control and understanding of what's going into your beer.

True, I do know it cannot be steeped, but I have read a bit about adding a small amount of 2-row to the steeping for the extra enzymes it will release and further enable the starches to convert to fermentables...anyone else hear of that?

Yeah, I should've obviously known that, changed all extracts to light...here's what I'm looking at now...almost 9% abv, about 75 IBU...

That's called a mini-mash or a partial mash. As long as you do it at mash temperatures, for a long enough period of time, the enzymes in the base malt will convert starches from itself and from specialty malts into sugars/dextrins. However, in your particular recipe, all of the specialty malts are steepable (they don't have a lot of unconverted starches), so they don't have to be mashed with a base malt. So if your only reason for the 2-row is for the enzymes, you don't really need it. You can do it if you want, and you'll probably get a little higher extract, but it's not strictly speaking necessary.

Are you shooting for a hoppy stout? 75 IBU is usually an average hoppiness for an IPA. I like to keep my stout IBU's down around 30-40 for traditional style standards.

I would either go with around 1 oz Columbus by itself at 60 minutes or 1 oz Columbus and maybe a late addition (maybe 5 minutes or even a hopstand) of Chinook or one of the others you listed, but really late as to provide more flavor than bitter. At around 8% ABV (OG 1.084-FG 1.021), the IBU's would be around 47...dont forget that the more ABV equals less bittering from the same amount of hops at the same time.

Unless you're trying to mash a Black IPA and a stout together.

Going towards more of an imperial style...75 is right at the ibu of a yeti or old rasputin...
