Mexican Cake is a delicious beer when new, but it does not age well. The yearly releases for the past two years have made note of this on the label, but the initial 1st Anniversary release did not, unfortunately. I aged 3 bottles for a year and it developed this...V8-like vegetable taste.

I've only been cellaring for a few years so far. I've got several 1, 2, and 3 year old bottles of things that I picked up new and set back myself, and a few that were already a little aged when I bought them. From that, I've got an '07 Thomas Hardy Ale that is probably the stand-out. I suppose it's more of a potential whale, given how long those can age.

I've also got 3 of this year's Bourbon Barrel Sexual Chocolate, so another one that has potential. This Saturday I'm heading to NoDa Brewing to pick up a case of their new limited release; A Pappy Van Winkle barrel aged Russian Imperial Stout called Monstro. I'm figuring that one also has a lot of potential as well.

Lots and Lots of homebrews... I still have 2 cases of a big barleywine that I brewed over a year ago sitting in my cellar. Seeing how long I can hold off. Also some Third Coast Old Ale, and a case of Lagunitas Imperial Red that was on sale for some odd reason for $1.99 a bomber?! Couldn't pass that deal up
