Aging Brett Saison in a keg

    OK, I've got a keg of saison brewed with Wy American Saison blend just carbbed in the kegerator. Next step would be to pull off a pint and see where the Brett stands. I'm afraid that I'll pull too much settled Brett/yeast, and if I want to age it longer (for more Brettiness), that I'll have screwed myself by pulling up all/most of the sediment

    Any tips? Am I over thinking it here? Should I play it safe and resuspend the sediment before pulling a pint / sample?

    I'd say if you are worried, do that. Just give it a shake. But I think it would age fine either way. I haven't kegged any with Brett, but when you bottle them you leave behind a whole lot of trub and they still developed over time.
