So I lost the recipe but I have the ingredients. This is an all grain 90 min boil. The ingredients are:

    18lb Pale Malt
    1lb Choc Malt
    1lb Pale Choc Malt
    1lb Roasted Barley
    1lb Special B

    2oz Kent Golding
    1oz Magnum

I mainly don't recall hop additions. I used BS2 and if I add all hops at 90 min it seems to work out.

I was also going to secondary with 2oz oak cubes soaked in 12oz bourbon at 7 days.

Anyone have any thoughts? I have another oz Kent hops if necessary.

I strongly suspect that the Magnum was the bittering charge and the Kent Golding was for a later addition(s). Otherwise there would be little point for a couple ounces of Kent Golding in a recipe like this.

ETA: but if I'm right, that would probably assume the Magnum is on the higher end of its Alpha Acid range.

Thanks. If you don't mind, of the 90 minute boil, how would you add the hops?

What are the Alpha Acid %'s for the hops? And what is your target OG?

    2 oz Kent @ 6.47% AA
    1 oz Magnum @ 12.3% AA

    OG target is about 1.046

    Whoa...wait a sec...what size batch?

22lbs malt in 5 gallons <> 1.046 OG. The OG would be a lot higher, unless mash efficiency is really low.

Yeah. Just went by BS2. I don't think I ever adjusted my mash efficiency because I haven't the slightest clue how to.

What is the mash efficiency setting set at in BS2?

    Mash Eff. 67.4%
    Total Eff. 61.11%
    Batch size set to 5.25
    90 min boil Per-Boil is 7.48 gal.

Something is definitely wrong. Are all your grain weights entered correctly? Sorry, but beyond that, I don't know what to suggest, since I don't have Beersmith.

It's cool. Everything is in correctly. I'm wondering, if this was your setup and grain bill, what would you do? Assuming my efficiency is similar to yours.

The problem is that your input and output numbers aren't compatible. (I suspect there's one or more parameters in your copy of Beersmith that are off.)

But assuming all the parameters in this thread (including 67.4% mash efficiency), and some other reasonable assumptions about various losses, BrewCipher says you're looking at an OG of about 1.099.

One ounce of Magnum @ 90 minutes @ 12.3% AA (kind of low for magnum if one ounce was supposed to be the bittering hop in this beer) is only going to get you to about 35 IBUs, which is pretty weak for a RIS this size. I would add an ounce of the Goldings to the Magnum @ 90 min, bringing total IBUs up to about 53. Still probably a little low for a RIS this size. Adding the second ounce of Golding at 10 minutes would get you up to about 59 IBUs and also give you a little flavor/aroma that might survive.

Understandable. How might I dial in my efficiency?

First, you need your software to give you reasonable answers. IOW, as long as there are parameters somewhere that are wrong, you'll never be able to dial it in. I would be looking at any parameters related to "volumes" and "losses", in particular.

But after you have the other parameters sorted out, just brew, measure your OG, and then vary the mash efficiency parameter until the new predicted OG matches what you actually got.

    (I'm speaking in general terms...sorry I can't point you to specific screen/parameters in BS2.)

I get it. I may just roll with it and do additions you mentioned. What's the worst that could happen? Lol
