Brewery that lacks one style to make it perfect

    Is there a brewery that you think would be perfect if it just added one or possibly two styles to its portfolio?
    For me, it would be Firestone Walker, I think if they added an imperial and non-imperial stout year round, I would drink Firestone year round. I love their BA beers, Velvet Merlin for my love of stouts, Union Jack and DBA are also great.
    If their is a brewery you drink year round, which is it and why?

    Interesting that you say Firestone, as I think they're one of the few breweries out there that does almost everything really well.

    New Glarus and imperial stouts. They could also use some saisons.

    Hill Farmstead and wilds (their saisons may have wild characteristics but aren't quite the same).

    Great Lakes and saisons/wilds.

    Three Floyds cannot seem to truly nail anything wild/saison either.

    Russian River and stouts.

    Gonna catch flak, but Founders hoppy offerings do less than nothing for me, so I'd like to see them work that out as well.

    You don't drink Union Jack year round? :wink:

    I would love to see Firestone produce a year round stout. Hell, I'd love to taste Parabola's base beer(s).

    805 is the glaring exception, imo. But they sell the hell out of it. Whoever came up with that marketing plan deserves a raise.

    Sixpoint. Would love to see them produce a year round Stout, a wheat beer may not hurt either

    I drink Union Jack and DBA year round, but man Firestone would be my perfect brewery if they just brewed a year round stout, whether an imperial, oatmeal, Irish dry, American, coffee, etc. But they do brew world class beers.

    They do everything well, every beer I have had from FW has been very satisfying, but I think their lineup is missing a year round stout, but yes, they are a world class brewery.

    I don't think Founders does many Belgian styles, so that I guess?

    My immediate thought was Russian River and stouts. You could probably say the same about Alpine, as Captain Stout is just okay compared to the rest of their lineup and they don't have any imperial stouts on their website anymore. Odin's Raven was good, but it seems they won't be brewing it again.

    Was just talking about porters and I would love to see Weyerbacher do a take on that style.

    Alpine IPAs are world class, I was disappointed with Captain Stout, I was expecting more. You are right on about Alpine. I also agree about Russian River, I would love to have a stout from RR that is also available. Availability is a big plus in my book.

    IMO a "perfect" brewery is one that perfects the styles it limits itself to brewing.

    This is probably the best answer. When thinking about my answer I ran across Jester King, Alpine, Side Project, Cantillon, Drie Fonteinen, Fantôme, etc. that all are excellent breweries but specialize rather than try to be a jack-of-all-trades.

    This could be true but I am think more in the context of a brewery that brews styles you love and does them well but then lacks that one style that makes you say, "I only need to look to this certain brewery for all my favorite beers." For me its Firestone Walker, they brew great BA beers, I love Union Jack, DBA, Velvet Merlin but if they added a year round stout of any style I would only need to buy from FW. So, what if a brewery did not limit itself to styles but was willing to expand beyond its portfolio?
