what's your dream beer?

    A few years ago Central Waters barrel-aged a barleywine in third-use barrels. First use was bourbon. Second use was maple syrup. Third use was a proprietary cocktail (which utilized said maple syrup). So they threw a solid barleywine into that barrel for over a year. It absorbed so many flavors- bourbon & maple syrup of course, but a ton of the cocktail flavors, too. I wish I could remember the cocktail recipe. It was something unusual, not your standar BA Old Fashioned or something like that.

    They served a few ounces of the cocktail (they had bottled it) next to the beer.

    It was one of the most transcendent beer moments of my life. If they could re-create that, I'd appreciate it.

    (If anyone reading this was at that beer dinner- Rumpus Room- and has the menu describing the cocktail ingredients, please send it my way...)

    I'm thinking a rich "chocolate" like porter like say Founders, but brewed with a Hefeweizen yeast that produces massive amounts of "banana" flavor. It would be like a chocolate covered banana beer! :grinning:

    A "sessionable" BBA Impy Stout with an a** load of coffee.

    Huge RIS brewed with star anise, ancho chiles, valencia oranges, guatamalan coffee, mexican chocolate, aged in 50% in bourbon barrels and 50% in tequila barrels then blended. 12.5 - 15% ABV

    An 18% English barleywine, low IBU even for the style , aged in Booker's casks with cherries and apricots.

    Cask conditioned Trillium double dry hopped fort point pale ale....brewed in proportional mild, pale, ipa and DIPA strengths.

    Cherry Pilsner. The cherry flavor from SA Cherry Wheat but in a Pilsner. It would be my guilty pleasure beer.

    Or, Ghost pepper cinnamon vanilla milk chocolate stout. Something that is both spicy and refreshing all at the same time.

    100% abv imperial session black IPA with brettanomyces and bourbon barrel aged. It comes in one oz. bottles. Very rare.

    Woodchuck apple ale, or whatever it is. Stuff's good. :wink:

    I'd say King Henry (I want more) and probably Vanilla Bean Dark Lord.

    One would be a Samuel Smith Organic Chocolate Stout at 10% ABU and the other would be Hoptimum available year round...or bottled Pliny the Younger!

    Granted, they each feature New Zealand hop varietals and you have to use a ton (the Prairie one was brewed with 3 lbs per bbl), but man the Brett just makes 'em sing. I don't see why it wouldn't work with the varietals I listed.

    Earl Grey Tea Stout. Or a Christmas Oatmeal Stout that uses cinnamon and maybe vanilla. ABV around 7%
