I live in Michigan, so a few times a year, I get a shot at grabbing some great beers. Unfortunately, so many great beers are only available for a few hours, days or weeks each year.

I'm not interested in aging them to determine how it affects taste. They already taste so good! I just want to take my time drinking them all and not have them go bad! Rough time frame is 6 months to 2 years.

In Michigan, my basement runs about 50 (coldest in Winter) to 70F (hottest in summer).

I want to keep stouts (BCBS, BBPT5, KBS, FIS, FBS, Stone RIS) and IPAs (120 Min, Hopslam).

Is the answer as simple as just refrigerate? What temp? Do I need to do something else? Do I store them a certain way?

    Appreciate your time! Thanks everyone!

The stouts should be fine in the basement, but the IPAs should go in the fridge and be drunk as soon as possible.

Then refrigerate them to prolong freshness.

I'm confused... isn't cellaring in Michigan the same as refrigerating? Or is refrigerating warmer?

    KIDDING!!!

Your basement should work just fine. If it gets too warm during the summer than it never hurts the beer to throw it in the fridge. Beer ages best at 50 degrees
