Balancing bourbon soaked oak cubes with my stout

    I know I`ve seen a post about this a while back just cant find it. I Made 10 gallons of a breakfast stout clone. My intent was to drink 5 gallons as is and the other 5 gallons soak medium roast oak cubes in buffalo trace for a few weeks then basically add it to the fermenter. I purchased 8oz of the cubes from northern brewer.

    Started soaking about 4oz in the bourbon last night. Thoughts? experience? I want the roasty, coffee, chocolate notes to shine but also want that wonderful buffalo trace to be there as well. Balance, Balance, Balance!

    If you still want some bourbon to shine through, I'd do 2 oz. oak cubes soaked in around 10 fl oz. of good bourbon. Pour the whole thing in secondary. I guess it all depends on how long it's gonna sit on those cubes though. Did 2 oz. of cubes, soaked in 14 oz. Jim Beam whiskey for a rye whiskey porter once, and the oak/bourbon is definitely there in the final product. The beer sat on the oak cubes for a little over a month. Either way I think you will have a tasty brew, man!

    How big was your batch of beer when you did this?

    It was your typical 5.5 gal batch. Probably closer to 5 gal though.

    I boil my cubes for a minute in the microwave to get rid of the harsh oakyness, then put in a mason jar with the booze of choice until I need them. I usually have apple brandy, whisky, and rye whisky going so I can choose what I need when I need them.
