Who loves all Simcoe IPAs?!

    I just recently made an all Simcoe IPA and I wanted to see if anyone else has had good results or if there was something special that you did to make it great? I really love all simcoe IPAs like Amazon Princess so could you recommend others?

    If nothing else, a single-hop IPA is a great way to isolate the flavor of that variety, including what you like about it and what might complement it in future batches.

    Probably the best place to try to find them is your local brewpubs or micro breweries. I am not specifically aware of any (nationally) commercially available all-Simcoe IPAs.

    The best place to get one bar none is out of your own fermenter.

    Simcoe is on the short list of hops that can make a great IPA all by their lonesome.

    The best all Simcoe IPA that I ever drank is my homebrewed all Simcoe IPA.

    I have purchased Weyerbacher Double Simcoe on multiple occasions (it is local to me). I have enjoyed it sometimes and other times not so much.

    I would hope that there's a lot of crystal in these to help take focus away from the barnyard cat. MO would be pretty mandatory for me too.

    I'm planning on making an all simcoe IPA this year. Last year I did one with all chinook and it was a hit.

    I'm drinking a simcoe SMASH homebrew. It's the second batch of homebrew I made. Never dry hopped and threw them all in during the boil due to going away on vacation.
    I guess it taste good but what do I know.

    I wanted to do a stright forward hop showcase. I used fresh processed hops that I got that day from hop union. So AA will be high but flabor will be intense.

    I don't know how high gravity you're wanting to go on this recipe, but have you ever tried Knee Deep's Simtra? I know... it's got Citra in it too, but it's a fantastic IIPA. I think the Simcoe plays out very nicely in this one.

    I guess the reason I'm posting, is because you could probably substitute the citra hops in this recipe for all simcoe. It would be some serious simcoe, that's for sure!

    Yeah, I actually did just that with whole cone citra a few months back. It was pretty good but it had more grassy and fruit instead of grapefruit and pine which I love! But I didn't FWH I just added an extra ounce at 60 instead.

    I thought that was Citra. Oh well, probably too much of anything makes it taste that way. I brewed an all-Citra IPA from brewtoad.com and it called for 4oz in the dry hop. Now, I like hoppy beers more than you guys do, and this beer is excellent and came out right for me, but next time I'll try 3oz instead... or two.

    River Dog Brewery in SC did an awesome simcoe pale ale. It was extremely balanced. In my opinion too much bitterness from simcoe can be undesirable. The pale ale balance really made this a gulper.

    So if I were to convert this to extract, the only fermentable malt is two-row. This may be oversimplifying it, but 12 x .6 gives 7.2 of pale DME. I'm supposing that the crystal can be left alone for steeping. I'm assuming a mash efficiency of 75% since its not otherwise stated.
