    Rye-whiskey aged w/o raspberries (I just got a bottle of Bramble; haven't had it yet, so I can't comment on it, but even if it's great, I'd still like to try it with rye and no fruit)

    Maple pecan, as has been suggested

    Raw cacao nibs and chiles

    I know it's not going to happen, but another batch of Vanilla!!!!

    This might seem strange to you guys but I think marshmallow would go well with the base beer and make an awesome dessert beer. If this is even possible

    Well based on the ones that have been created and served at one point or another I'd love to see these in bottles;

    Blueberry Bourbon County Stout
    Neopolitan Bourbon County Stout
    Mexican Hot Chocolate Bourbon County Stout
    Ghost Pepper Bourbon County

    Variation on Bourbon County that I'd love to see available;

    Smoking Gun (Big John and 2 parts Vanilla Bourbon County, 1 part of which was smoked using a smoking gun instrument)
    Old Max (Blend of Bourbon County and Nogne / Mikkeller (forget the European Brewery) that was aged in Pappy Barrels with Brett)

    Rumor I've heard (and we all love rumors) is that Wheat Whiskey Bourbon County is getting delayed until 2013 (Laffler wasn't happy with the beer at all 3 months ago) and Cherry Bourbon County will be the next bottled variant.

    A nice Stout done right in either a Highland Scotch barrel which would be very subtle, or a hammer like a Lagavulun, a smoky, peaty monster of a stout.

    i think they'd have a hard time marketing some of the varieties described above while still using the term "Bourbon" in the title.

    how about a Pap Van Wink 20 - call it "Damn Near Rare" or something equally silly!

    Honestly GI hasnt done anything bad but a cherry version does not thrill me at all.
    I really don't care for cherry beers.

    I'll try it though.

    The Ghost Pepper BCBS was amazing! I could only dream of that being bottled.

    Old Max at Stout Fest 2 years ago was a stand out for me. Just fantastic. Also, interesting to read about the Wheat...I'll have to do some more research in that being delayed...I'll shoot Kris an email and find out what's up. A Cherry Bourbon County at Stout Fest 2010 was a bit of a disappointment to me. The cherries were rather cloying and overly sweet. I don't feel like it blended well with the bourbon.

    part of the taproom series, not bottled.

    i can't imagine how good top brewers making a beer prominently featuring cashews (one of my favorite tastes) and barrel aging would be. it's such a good idea that i'd almost be guaranteed to get my expectations too high... but from what i've read in threads and reviews, the beer exceeded pretty much everyone's expectations.

    I would love to see Candy Cane or Peppermint BCBS bottles and released around christmas 2012!
