I am fairly new to sours and really enjoy tart lychee. I am being told in other forums its not all that sour. Will this become more sour with age. Whats say you? Cheers!

New Belgium sours (post ~09 corked and caged bottles) are pasteurized so while they may age, I wouldn't expect them to become drastically more sour over time. Also, I would guess that some of the lychee and cinnamon flavors might fade in that beer giving it the perception of being slightly more sour.

I listened to an interview with Lauren Woods Salazar who is the blender for New Belgium and she said that their sour beers are already a couple of years old by the time they are bottled and therefore are meant to be drank fresh.

i wish i had a dollar for every time Lauren Salazar bitches about aging beer...she's also said that the only beer that should EVER be aged in the bottle is a Barleywine.

the pasteurization thing is true though. i wouldn't age Tart Lychee much...it's perfect now.

I think the new Brett may need some aging, it hasn't done what I'd expect from it, but I agree otherwise that most of the LOF series beers are ready to drink fresh. Aging won't do much for them in a good way.

I really enjoyed the Tart Lychee. Hope the new Brett one is just as good.

The Brett Beer was pretty nice, and for the price was definitely worth a shot. Not sure if it will change much over time since it is pasteurized.

Right, because lambics and gueuzes don't do well with any age on them...:astonished:

I think every beer should be aged, at least a couple bottles. I love barleywines and some DIPAs turn into amazing examples, but one wouldn't know until one did it.

My favorite barleywine is Maharaja. Seconded by Pliny.

Try an older c&c La Folie, it's mind blowing.

I had the Brett Beer tonight. I didn't think it was near as bad as some of the reviews. I think it holds up to the the quality in the Lips of Faith series.

That was how I felt. I thought it was solid. Perhaps not the best beer I've had this year, but definitely a good option to have.

the Brett beer wasn't mad, but not even in the same class as Tart Lychee, IMO. i think TL is world class.
