So I got the Abyss in a trade, and it was semi-cold when it arrived. I figured "I'll drink this soon because I'm impatient and I need it now, might as well stick it in the fridge." I was going to open it the other day and noticed the best after date of November 2015 or something. I researched what people thought, and it seems like the majority say that you should wait til the date (obviously no one has aged the '14 a year yet).

Anyway, I really want to drink it at it's peak as it is my only one. I have heard that it is not good to have beer get cold then warm and so on, but reading on here most people seem to say that's fine.

So my question: will keeping the beer in my fridge until November slow down the desirable aging/cellaring/whatevering and make it require more time until it's optimal, or does that matter? And if it does slow it down, I'm sure most everyone will say that it's fine if it changes temperatures again? Also it will not be in a cellar if it comes out of the fridge, it will be in a corner of my room (68-74 degrees) shielded from light.

    Thanks

Sounds like you answered your own question. The fridge will slow it down. And a change in temp doesn't matter. Most of the bottles in shops come off the truck cooled anyway. I think optimal temp is 50 something but it is what it is. Good luck!

EDIT: If you never had it, I would drink it now. Always best to try a new beer fresh.

Abyss 2014 was drinking phenomenally right from the get-go. More so than I remember any prior years. If you have never had the beer before, I would strongly suggest you try it now.

I've never had previous vintages, but I had the 2014 a few weeks ago and thought it was excellent. Drink it!

Thanks for the advice, I guess I'll crack it open pretty soon!

Except maybe Abyss and Black Butte Anniversaries. They purposely have an "Enjoy After" date on the bottles to promote cellaring. Now, I've had both of these fresh and they've been good - but Abyss particularly with some age - is amazing. Cheers!

Well that's cool. Didn't know that. Well then drink it when they suggest!

I don't have advice, just saying The Abyss is one of my favorites. I'm envious. I had a friend who shared one with me then gave me a bottle. I didn't know enough then to age it so I drank it within a few months. Anyway, it's a great beer that deserves respect. You will enjoy it, I'm sure.

I've had Abyss both fresh and aged and I can say that this years is super delicious and complex right out of the gates. If I had more bottles I certainly wouldn't cellar them (same goes for most, if not all adjunct stouts IMO) Get on that one ASAP and you won't be disappointed. Cheers!

I would give a fresh abyss a 3.0. I would give one with a year or more on it a 5.0. Dear god let it age to at least the suggested date if not longer!!!

What you should do is drink this one and try and trade for another one so you can cellar. Abyss is not hard at all to land anymore. Any semi-limited non-shelf beer should do the trick.

I have had a bottle fresh and thought it was very very good. I have one bottle left and it's been hard not to drink, and I'm trying to keep it until the best after date to see if it's changed.

I figure always drink one before deciding to age, you may love it fresh or you may prefer to give it more time to blend.

For aging people always say to try at keep in between 50-60 temp.

With Abyss and BB Xwhatever, older realm is better. April of last year I had the pleasure of doing verticals of both, and in both cases, the longer it had aged, the more magnificent it tasted.

I'm going to a beer tasting on Saturday and they will have Abyss on tap for growler fills, even went up there to verify. Never heard of it... but by any chance, can you age beers in a growler? I know it's a huge risk, but I would like to have some extra since I only have one bottle left.

Not worth the risk; it's more likely to go bad than not. Abyss is still on shelves in less-trafficked places in TX and elsewhere in the country.

I saw some Abyss on the shelf at an HEB just yesterday.

I would agree with the posters saying to drink any beer fresh if you haven't had it before....the lone exception I have to that is deschutes barrel aged stuff and stone enjoy after. essentially, when the brewery tells you to age it, I age it.

That being said, whenever you decide to drink abyss, you won't be disappointed!!

Side note: how the hell is abyss still on shelves in Texas?!
