Who's Brewing 4/10-4/13/15

    I'll kick it off. I have said twice in the past now that I am going to brew a Saison and haven't. Saturday I am for sure brewing it, 10 gallons. Pale, Flaked Oats, Vienna, Sugar, sprinkle of Chocolate for color. Crystal, Nugget, Meredian. 1.037 OG, 4% ABV (hopefully), 37 IBUs (all late additions), 7 SRM. After running 1/2 the batch off through the CFC into the fermentor, I will add some Ginger, Anise seed, and GoP to the WP and let it steep another 10 minutes before chilling the remainder. 100% ECY Brett nanus on both halves. Ferment for 2 weeks then see where to go. If the nanus stops short of where I want it to finish I will add a secondary Brett strain. Might still do that at bottling if it does finish where I want it to. I really don't like bottling, but I really want to know what different secondary additions do with this batch, especially some additional Brett. This is a flagship trial batch.

    We'll see what I get to. Dry hopping a pale ale and kegging a kolsch. But some non-beer items on the weekend like st too, and some are high priority

    I'm planning a hoppy amber ale - Blazing World clone. I use an immersion chiller and I'm gonna do hop stands for the first time (one at flameout and one at 170). A good excuse to multitask and check out The Masters!

    10 Gal of Nut Brown and some sort of quick turn-around beer should get done this weekend. Maybe the Averagely Perfect IPA, if I have everything.

    Brewing a Tank 7 clone. Haven't make a Saison in a while, with this batch I will break the 1000 gallon mark.

    Planning on the Averagely Perfect Saison for Saturday. Had everything ready to go for last weekend, but some stuff came up. Hopefully I can avoid that this time around.

    What changes have you made to this since your last iteration? Also curious about the strength of the anise addition.

    Is that all? . . . if you toss in some wine-soaked oak spirals, maybe pureed bananas, a pinch of cannabis (it is Oregon), and finish with some beard yeast I believe you will have covered it all. You can call it: Évier de Cuisine Saison

    I'm brewing but found it's safer not to "declare" the style until it's finished. Got some decent German malt, some better'n average Belgian yeast, a variety of Eng/Slo/Fre hops and some good ole US-water. Will know what it is in about 4-5 weeks . . .

    I was going to brew a Strong Scottish ale to barrel age (with oak chips) but I read that I need to let those chips sit in cheap burbon first for a few days, and then with something nicer for another week, so the brewing will wait.

    You could just boil the chips. Also, you have 2-4 weeks before the chips are going to get used.

    Soul Glo 2.0 Weizenbock for comp. In 2nd place for Louisiana Homebrewer of the Year after 2 sets of comps on the bayou circuit. 5 more to go. Going all out this year and come what may. Next year and the next few years I'm brewing all for mee.

    Ahh ok, sorry. It sounded like you have been brewing this recipe for a while and makin small tweaks along the way. I really like what I've heard about Brett Nanus and would like to try it in a Saison someday myself.

    Brewing a more traditional Belgian Saison, possibly brewing an Equinox, Mosaic and Simcoe IPA as well. Bottled my first Brett Saison last night...I used all Mosaic, including a dry hop, and it turned out absolutely amazing! I'm kegging a Two Hearted clone that I used ringwood yeast with, and possibly bottling a batch of mead and/or a Galaxy/Mosaic/Amarillo Brett DIPA.
