Who's Brewing 4/10-4/13/15

    With the temperatures (finally) rising, I won't be able to brew again until my keg kicks and I can repurpose my keg fridge into a fermentation chamber. But I did bottle the last of my batches yesterday, an all-grain Stone IPA clone. I was pretty happy because I've adjusted my bottling procedures and I think I've cut down on the amount of oxygen getting into the beer by a large amount. Also, I remembered to rack onto my priming sugar this time. :rolling_eyes:

    De Struise Pannepot style Belgian dark strong (ie. somewhere between a stout and a BDS). I'm using carafa special I and III for the color/flavor but minus the char. Flaked maize instead of sugar to help dry it out a touch. Otherwise it's a fairly standard BDS. Hopefully it works out.

    I've done quite a few Saisons in the past with Sacc, with or w/o Brett added. This will be the first 100% Brett, and first time with B. nanus. The starter wort tastes like a Hefe, clove and bananas, hoping for a little more earthy and fruity notes from primary. That is part of the reason I am shooting for some of the spices for that extra depth.

    No brewing, but will probably make a run to the LHBS for a bag of Maris Otter and some misc. items.

    Not really. I'm hoping to get the earthy and spicy Saison notes that B. nanus is supposed to throw. ECY recommends to use a secondary strain, which I will end up pitching after the krausen starts to drop.

    Session IPA/Pale with Yeast Bay Funktown Pale. 50-50 blend of Citra/Centennial to around 50IBU.

    Also may end up throwing in the dregs from a bottle of Wicked Weed Lusus Naturae (100% Brett DIPA) along with the YB strain.

    Finally get to do some brewing tomorrow...

    A hopped up PA. I'm clearing out some of last years Chinook, Amarillo, Citra and Simcoe.
    And a Porter on the heavy side. Post fermentation I will split, put half into my new 3 gal corny, and half will go to top off my vatted porter.

    I'm using Wyeast's Burton Ale yeast for the first time. Anyone here use it before? It was the freshest ale yeast I could find locally so I grabbed it on a whim.

    Well just got a call from a friend who is bringing me some WLP 060 so it looks like pale ale time!

    I'm planning a lemon grass and citrus saison for tonight.
    Going to use my harvested st.bretta spring dregs.
    Seems to be quite active, first time using yeast I rebuilt from dregs... excited!

    Have also have some cut up staves I rescued from a Chardonnay tank we emptied at work I'm planning to age the beer on.

    No brewing, but I just stuck the 2nd step of my 644 starter in the fridge so I can decant and pitch into something this weekend.

    Still watching the Avg. Perfect Saison slowly bubble away at 80°.

    Going with a Galaxy hopped pale ale with WLP Pacific yeast.......never used these hops or yeast before but found the flavor profiles interesting

    Brewing an Ipa with Citra, Columbus and Galaxy and a Saison with Galaxy and Amarillo.

    I'm going to do some bottling and move the saison out of the hotbox and into the pantry for its last week and then cold crash and carb a porter. Then I might bottle my Hefeweizen, but I'll probably wait another week on it. If I brew at all it will be an APA or Burton.

    Side note: Anyone else have so many recipes they want to try that it is incredibly hard to decide what you want to brew?

    I keep adding things to my list to brew, but the list grows faster than how much I can brew. I end up planning my brews a year in advance now. I more or less stick to my plans, but I always seem to fit an odd batch in if I need to, ie AP Saison
