Check the Benelux forum (belgium, netherlands, luxemburg) Lots of amazing information there. But a few names to check out Bierkoning (store) Beertemple (pub) Wildeman (pub) Arendsnest (pub) Hoppy Days (restaurant/pub) Craft and Draft(store/pub) 't Ij (brewery) De Prael (brewery) There are more, but that is the tip of the iceberg
I was very disappointed with beer in Amsterdam. A lot of fancy and nice looking pubs, but not one draft beer that i have really liked. Sometimes, gives me the impression they are more concerned with the style , than with the beer. If you find something, let me know. Went with a friend of mine that lives there to Brouwerij 't IJ . Interesting place, but i did not like the beer.
I'm in Amsterdam right now (fr Colorado) and can vouch for De Bierkoning. Westy 8&12 and decent Cantillon. However, I've yet to find another bottle shop to rival, thoughts anyone? Btw, OP, Brussels is a 2hr drive and it's worth it for the Trappist and Cantillon experience!
There are more good bottle shops throughout the Netherlands but they are not always east to find. If you're travelling around the country a little bit there are nice ones to go see. Leiden has Bierwinkel Leiden, Delft has Flink Gegist both of which are very decent shops. My home town of The Hague has ABC (Alien Brewing Company). And the bottle shop at De Molen brewery is also quite good with some excellent finds now and again. But none of them rival de Bierkoning.
