    Dear Pipeworks: Please distro your beers down to the suburbs so i quit getting ***** by Chicago taxes. Thanks.

    BTW: have a Cash 4 Gold and a Rose waiting at my buddy's house for pickup. Still haven't popped my Blood of the Unicorn yet, but it would be cool to do a side by side with the new version. I better drink my EOD days soon too. Looks like there's some boozing to do this weekend.

    Latest from Pipeworks (emphasis added):

    Batch 023 Close Encounter Hoppy Double Stout & 025 Ninja vs Unicorn Double IPA started hitting shelves today, and blended Batches 005/006 Barrel Aged Smoked Porter will be going out tomorrow. Both 005 and 006 have been aging in Koval Barrels for about 5 months and there is definitely more of a barrel character than Batch 001 Barrel Aged Smoked Porter...It'll still be $8.99/bottle and will have Yellowish Orange wax (not sure what'll it'll look like; we're dipping them Wednesday before they go out).
    All three of these will be held for Friends with Benefits at both Binny's on Marcey St. and West Lakeview Liquors for an entire week starting Wednesday, July 25th.

    On the horizon:

    Poivre du Sichuan, 7% Saison brewed with ginger and Szechuan peppercorns
    Ubiquitous Pale Ale, a ubiquitous pale ale
    also Another American Hoppy Wheat Ale, gotta love the enthusiasm here
    Jones Dog, 8.5% stout with cacao nibs and vanilla
    Sour Smoked Porter, tasting amazing... but not sure when we'll package
    Evan Williams Barrel Aged Hyper Dog, late fall early winter?
    End of Days, since everyone seemed to like that one ;-)
    another Saison or two that we have worked up, something slightly dark but refreshing and drinkable

    and....

    we mash in our Berliner Weisse on Friday! >=) Rejoice sour heads!!!

    O, and Revenge of the Unicorn will be replacing Ninja vs Unicorn next month... so there's that.

    True Berliners take a long time to sour. That being said, you can speed up the process in various ways, like adding lactic acid directly (and I'd argue 95%+ of the population won't be able to tell the difference). If the Pipeworks guys are purists, it could be a while though. I *believe* their original Berliner recipe also has a chardonnay barrel-aging component, but I'm not sure what their plans are for this batch...

    Interesting. I wonder if they mean "mash" as in creating the primary mash (grains, heat, H20) in brewing but to lower the pH levels to acidify it up.

    More likely (because the Pipeworks guys seem to really know what they're doing) is the other method of sour mashing, in the secondary fermentation process, either through oaking the beer, adding Brett, or lactic acid bacteria. I'd be interested in which method they're going with.

    Just as a quick follow-up - Gerrit said that Pipeworks would 'probably not' be producing a pumpkin beer this year, which is a bit disappointing because they could potentially make something pretty special.

    They released a label for Unicorn's Revenge a while back...don't know if the name switched or not, or it's an entirely new beer. I wish I could post the picture, but my Internet Explorer from 2002 wont let me....(I hate BA at work).

    I know they use a sour mash - you can read about it in their Berliner homebrew recipe. http://atimeforbeer.blogspot.com/2010/11/berliner-weiss-recipe.html

    However, there may be some other elements in play that accelerate the process.

    -we use a sour mash for our Berliner, no lactic acid added artificially
    -Headless Unicorn, we shall see... =p anyway, our pumpkin beer won't come out until October/November if we are doing one... unlike those other guys sending you pumpkin beers in July... so hence I just don't know yet, but the Lansman's txt today definitely got us thinking about it...
    -Unicorn's Revenge will be a 10% Imperial IPA using all fresh New Zealand Hops that will be in stock at the end of this week (their hop harvest is opposite the Northern Hemispheres) (we're calling Ninja vs Unicorn a Double IPA at 8.5% and Unicorns Revenge an Imperial at 10%... we know the term Imperial is stupid... but why not use it... just like we're calling Close Encounter a Double Stout at 8.5% and our Imperials will be up over 10%...) Trust us... you won't miss NvU once Revenge is out. Plus we have a whole line of super dry hopped 7% Pale Ales coming out that are hopped like NvU but less bitter and less alcohol for something just a bit easier drinking.

    great job pipeworks guys. y'all gonna get a distributor anytime soon?

    I kinda like how i can have my buddy pick me up some of ur brews and bring them back to me out in the burbs here... makes for great suburban bargaining (bribery), cuz not many of these fools out here know about ya. But theres plenty of folks out here that would love your stuff!

    good question. i know they self distribute which is badass. but...i don't think they need a distributor, yes? once profit kicks in and is stable...i would assume more trucks to deliver beer, bigger staff, longer distance for distro. i wonder what the long term goals are. (then expansion)
