New Tired Hands to open next week.....

    When I can get a pint of Pliny the Elder brewed in Cali shipped to PA and IMO better than any Tired hands IPA or DIPA from Monks for the same price as a Pale Ale pint from Tired Hands it makes you think about pricing. Just Sayin....

    It's absolutely a fair comparison. Disregarding the breading and frying, do the insanely more expensive chicken parts taste better than what you'll get at Popeye's? I'm all for eating locally grown, unprocessed, all-natural food, but let's not pretend that that automatically translates to better taste. Obviously, part of the $26 you're putting down is also for ambience, service, dining experience, etc., so the comparison is not direct, but it's in no way unfair to compare the taste of the fried chicken at Tired Hands to that of Popeye's. It's the exact same dish.

    I've come to accept paying $7/pint despite the fact that the beer is brewed right there (unlike a bar that has to buy the beer from a distributor). But I've never understood why the upcharge for a smaller amount of beer? If you order a 4oz or 8oz glass, you're paying the equivalent of $9/pint.

    Labor, energy, and space. The labor for taking an order for a 4 or 8 ounce pour and then pouring it is close to the same as that for a 16 oz. pour. The labor and energy required for washing the glasses is pretty much identical. Stocking all of the extra glasses takes extra space and the added labor of putting them away.

    All of these things cost money. If you don't figure it into your pricing of the smaller pours, you're going to be short on revenue at the end of the month when you compare it to the amount of beer you sold. Charging more per ounce on the smaller pours ensures a constant profit margin on beer sales, which is incredibly important in managing the business properly.

    It's funny that you should compare Tired Hands to Pliny. Look back in this thread, I'm an out of towner from three states away who is no fanboy of Tired Hands. However, I was in Philly this past weekend. I had three different Tired Hands IPA's at the two different locations. Also had a PTE at Memphis Taproom. Of the four, PTE was my third favorite. Same $7 price, and the pint pours at Tired Hands were larger than the (12oz?) PTE pour.

    Not saying Tired Hands should cost as much as Pliny, but saying I'll take the (fresher) Tired Hands over Pliny at the same price any day.

    I have no problem paying a little bit extra for something ultra fresh, but it does suck a bit that their 8% and higher beers are 6 bucks for an 8oz pour, where close to 2oz of that is foam/head.

    It's not like we are talking about crap Shop Rite steak versus dry aged steak at Mortons. "We're talking fried chicken." So, does anyone really have that distinguished a palate where you can discern the quality of fried chicken from A versus B? They are bending you over plain and simple for a meal that has very little in the way of differentiation. I said it before, you can get 8 pieces of chicken at Federal which comes with pickles and a complimentary donut for $17. And most people go gaga over Federal even though I think it stinks. You are getting fleeced at Tired Hands and paying simply for the fact that you are eating at a coooool and edgy place.

    I wonder if Tired Hands would let me bring in my on bucket of fried chicken if I was wiling to pay the functional equivalent of a 'corkage fee'!?!:confused:

    Just because of this thread, I have been more aware of fried chicken recently. The Popeyes in the Gallery closed and the KFC closer to my home closed. Maybe TH knew what they were doing in their pricing, bending over fried chicken junkies who need a wing or thigh fix.

    But will they reduce the $.50 increase when debts are met? I'd be willing to bet whatever you'd like their prices go to $6.50 before they ever see $5.50 again.

    Nothing for or against them. Just commentary.
