    if you've ever seen a lambic in the "sick" phase, there are "ropes" of bacteria, yeast and undissolved solids
    in the beer. it's the first term that came to mind.

    the pour my wife received had thinner (but similar) "ropes" of yeast in the glass. the lines were clearly visible and detracted from both the appearance and flavor of the beer with respect to my pour. they settled on the bottom of the glass. highly unusual, but that's what we saw. i didn't see it initially since i was getting (and enjoying) a pour of mattina rossa...thankfully carbonated and wonderfully fruited up front...but the brett still has some work to on the back end of that beer to clean it up and dry it out. a minor critique to be sure, but i look forward to bottles...

    I got a last-dreg pour of the Cantillon WFB and asked for them to either dilute it with a top-off, or pour some out and top-off. The guy was a little hesitant but did comply so I was happy.

    You got a dreg pour diluted with neck gueuze? You might as well have been drinking a completely different beer.

    I'd have brought it home and tried to harvest the yeast :slight_smile:
