    I'm brewing a balvarian hefeweisen today, getting the standard recipe down first so I can try making one with a hint of watermelon. Gotta figure out how much sugar is in watermelon though. Anyone have any experience?

    A bucket with a spigot makes closed co2 transfers to a keg much easier. Gravity does most of the work. Only one hole is needed on the lid.

    No brewing, but I bottled/kegged 12 gallons of the AP Saison, smelled awesome, can't wait to taste.

    Brewed our house IPA called "Ninja Juice" yesterday (named by my 3 year old son who is obsessed with TMNT - just like his Dad and Uncle!). We've been tweaking the grain bill and hop additions and we're really starting to get it nailed down to damn near perfect. Warrior for bittering, then pound it with a heap of Citra, a little Simcoe and Amarillo, and a small amount of Chinook in the last 10 minutes. We also added an extra punch - borrowed my buddy's Hop Rocket and put an ounce each of whole leaf Citra, Simcoe, and Amarillo to filter through while pumping into the fermenter. The wort smelled and tasted unreal so I'm excited to see how it turns out compared to the last few batches. It'll get two dry hop additions - mainly Citra, some Simcoe, and a little Chinook. Pumped for this one!

    We also transferred our Imperial Coconut Porter (12% abv) into a freshly dumped bourbon barrel. Also added Tahitian and Mexican vanilla beans into the Rye Whiskey barrel that's been holding our Imperial Stout (13% abv) for the last 2 months - that'll get bottled up in about a month depending on how quickly the vanilla takes hold. I don't think I'll be spending monday on Bourbon County ever again.....multiple beer buddies of mine have already stated they prefer the uncarbonated stout fresh from the barrel over BCBS in a side by side. So pumped at how far our brewing capabilities have come!

    Oh ya, also made a massive blunder - probably the biggest mistake we've ever made (it was my fault) which I'll post about elsewhere so y'all can make fun of me.

    Finally getting around to doing a traditional Hefe, with a sort of fruity/tropical twist on the style by adding Citra near flameout, and dry hop with Amarillo:

    Grain
    7.5lb German Wheat Malt
    3.5lb German Pilsner Malt
    .5lb Rice Hulls

    Yeast
    Wyeast 3068 Weihenstephan

    Mash
    Protein Rest: 122° F
    Beta Sacch’ Rest: 149° F
    Alpha Sacch’ Rest: 158° F
    Sparge at 168-170° F

    Boil
    .5 oz Hallertauer - pellet (60 min)
    .5 oz Hallertauer - pellet (10 min)
    1 oz Citra - whole leaf (5 min)

    Dry hop with 1 oz Amarillo

    10 gallon batch
    20lbs 8.0oz of 2-row
    1lb 14.4oz Munich Malt
    1lb 5.6oz Carafoam
    1lb 4.0 oz Crystal Malt
    1lb Melanoiden Malt

    4oz Cascade(2oz at 30min, 2oz at 20min)
    2oz Glacier(10min)
    2oz Citra(Whirlpooled at Flam out)

    Mash Temp 152F
    batch sparge at about 168, 3 stage
    75min boil
    Yeast: Safale American(us-05)
    OG was 1.060
    Dry hopping with 2oz of Willamette when racking beer on Sunday

    I am brewing my second ever homebrew... My first is currently bottle conditioning (checked one 5 days in and it's really turning out nicely! An APA... 5% ABV, 60 IBU... Pale 2 row, Victory and 20L malts with Simcoe, Citra and Chinook hops... Dryhopped 7 days in primary with additional Citra and Simcoe). Aroma is fantastic and taste is developing really well. Another week it should be all set, just in time for a camping trip!

    Monday I am doing a Hefeweizen. It is projected to be 4.83% ABV, 13 IBU. 3.5 gallon final batch.

    53.3% Wheat Malt
    40% Pilsner Malt
    6.7% Rice Hulls

    0.5oz Hallertau Hops

    Wyeast 3068 Yeast


    I look forward to brewing Monday morning!

    I just wrapped up...brewed an ordinary bitter w/Maris Otter, Cara-pils, and C-60 with Northern Brewer and EKG hops. Pretty well hit all of my marks...Should come in around 3.7 - 4%...should be a really good session ale.
