fermentation after 2 weeks

    Just checked the FG on my first IPA and it is 1020 and Beersmith wanted it at 1018. I opened the airlock and I see yeast on the top of the beer. This is my first time using white labs cali V. I don't know what to do? The beer tastes great but is the beer finished? I used 2 vials for a 5 gallon batch

    Test it again in 3 days, if you're wanting to bottle quickly. Otherwise, let it ride another week and test again.

    Download BrewCipher, enter the recipe, see that the FG prediction is 1.020, and bottle. Just kidding... 2 points off isn't unusual. But you still need to make sure it's done. Do like JohnSnowNW said and check again in 3 days. If it hasn't moved, it's done attenuating.

    BTW, 1.018 or 1.020 is fairly high for an IPA. Was this a very big IPA or did it have a lot of specialty grains? And how long has it been fermenting?

    It fermented for 2 weeks, was at 70 for the first 3 days and 68 for 11 days. This yeast was the most active of any I have used. I used 13 lbs of pale ale 2 row, 1 lb caramel 40 and 1 lb carapils dextrin

    Is there any way to clear the yeast from getting in the keg?

    If it doesn't fall by the time you want to bottle, you can rack from underneath it. If using an autosiphon, just lift it when you hear spooge entering, just like you normally would when the beer gets low enough to suck air.

    I am kegging it, but no big deal I will just pick up a auto-siphon. I just don't understand what happened because my temps went great fermenting and I hit my OG. This is suppossed to be a forgiving yeast.

    2# of caramel malts is pretty aggressive for a 5 gallon IPA batch. Likely the main culprit for the high FG

    I popped your recipe into BrewCipher (and forced OG to 1.070) for a comparison/confirmation. The 2 lbs of Crystal Malts is keeping the FG prediction a bit high. 1.017 per Brewcipher, with an (assumed, since you didn't say) mash temp of 153F, for 60 minutes. Bumping mash temp to 154F raises the prediction to 1.018. Bumping to 156F raises the prediction to 1.019.

    Same advice...check in three days.
