Which is the Better Two-Hearted Clone?

    This is the first time I have heard of the yeast vendor Inland Island.

    I went to the linked website and it lists a half dozen (Colorado?) homebrew shops. I clicked on few of them but could not find any of the Inland Island yeast products listed. Is the purchase of Inland Island yeast solely an in-store purchase at these select stores?

    What did you pay for your vial of Inland Island yeast? Do you know the cell count of their vials?

    I know Barley Haven was shipping the yeast for a little while. http://barleyhaven.com/yeast/brettanomyces-bacteria.html That is my LHBS and the staff is excellent. I was told the cell count was in the 150 - 175 billion range and the price is $8 and change.

    I read it somewhere. Don't have the source handy. Maybe in Gordon Strong's book or in another Homebrew book I recently read. I've also brewed the zymergy recipe that was provided by Bell's General store Manager (referenced earlier in this thread), and while it was tasty, it didn't seem to taste all that similar to two-hearted. I plan to make some modifications (ie making Vienna 15% of my grist and modifying the hop schedules and additions) next time I attempt to clone two hearted.

    Edit - also Gordon. He likes Vienna in many recipes.

    They said no Vienna in Two Hearted. They don't use much Vienna in their beers.

    I spoke to Mike (of Bells) and he stated the grain bill of Two Hearted is:
    • A mix of Briess 2-row and Pale Malt as base malts
    • 0.5 lbs. of Briess 40L crystal (for a 5 gallon batch)

    Pale Malt = Pale Ale Malt?
    Well, I guess my IPA is going to be unlike 2-hearted in a lot respects (no Pale Ale malt, wrong crystal, too much crystal, not enough hops) but that's ok, because it ought to still be good. I really only set out to buy a kit because I had some discount points, there was some sale to take advantage of on top of that, and I wanted to go with a fairly typical IPA for a group that likely knows and enjoys 2-hearted. Time to dry hop with 2 (not 3.5) oz.

    Peter, my guess is Pale Ale Malt. I did not specifically ask that question and Mike just stated "Pale Malt" during our conversation.

    Who was Mike? I knew David and Ryan. Mallet showed.up but I saw him at a distance.

    The Zymurgy article grain types and % are from the production brewery. Hopping can be hard to scale up/down.
