Am I looking at an imbalanced beer?

    Thanks everyone for your input, advice and words of caution on this (hopefully you didn't judge me too harshly, haha). Ultimately, I'm going to skip the extra 3 lbs of DME and brew the beer with the original recipe (using the numbers OG/FG numbers given by Brewer's Friend). It's probably still a bit out of my league, but I jumped into homebrewing wanting it to become a full-blown hobby -- so trial by fire it is. My yeast starter is bubbling away right now and brew day is coming up. I'll keep you all update on how it goes!

    If you want to up your OG without getting an increase in unfermentables, just add cane sugar. I might also think about using a more attenuative yeast strain like Cali Ale/001/Chico/US05/1056 and DEFINITELY make a starter if you're using liquid yeast. I like the ease of pitching a sachet of dry yeast and find no difference between liquid and dry with Chico.

    True enough statement. But the OP doesn't really want that. He wants a stout bigger than 7% ABV, which his original recipe actually provides, in spite of what his LHBS guy told him.

    Right on. Just wanted to make sure that he knew that all that extract is going to come along with a LOT of unfermentable dextrins and with a yeast strain that only attenuates to 70% or so, he is likely to come out with a stout that is a lot sweeter than he probably intended.
