    I've been doing this for years, and burgers are no exception. Edge to edge red/pink and crusty exterior. I take whatever meat it is off 10 degrees before it gets to final temp while I turn on the rest of the burners/stoke the fire. Sear with lid open and comes out at temp every time.

    Gonna get hung for this, but I think all Jester King taste the same, no matter which one it is (O&P excluded). I guess my palate is not dialed in to sours where I can distinguish the nuances of them. So no more for me, I'll send them to people who appreciate them more.

    I actually agree with you and recently made the comment there are three breweries where if I had about 90% of their lineup I'd be able to pick it out blindfolded: Hill Farmstead, Tired Hands and Jester King. I also asked if that's a good or bad thing.

    I love that friggin' beer, and I know the brewer put his heart and soul into it! Can't wait for their next one-off release (a barrel-aged Quad), and really glad they've gotten into the one-off release game.

    If I'm eating out, my favorite burger I've had of all time was the burger at Palena in DC, which unfortunately is no more. Dry-aged round and chuck, topped with truffled cheese and garlic mayo on a brioche bun. Was fantastic and could single-handedly turn a bad week into a good week.

    If I'm cooking at home (and don't have access to that kind of ingredients), I'm going with the best quality ground beef I can find, cooked medium rare on a potato roll with white cheddar and homemade mayo with a piece of romaine on the bottom. The lettuce being on the bottom is critical as its a moisture barrier (as is the mayo) between the burger and the bun to make sure the juices stay in the burger as opposed to running all over the plate and making the burger a soggy mess (a trick I learned from Ray's in DC as well...).

    I don't often ask, but can anyone get me a King Sue by next Friday? Got my brother in law coming for the weekend and he absolutely fell in love with it at EBF. 2 would be even better, but one would be fabulous...

    You know, I do really like a friend egg on a burger, but if I'm going with 'favorite burger' I gotta really be able to get the beef flavor so the fried egg needs to stay at home!

    Picked up a couple of these from my local yesterday, can't wait to try! So glad they're finally getting the Avery 12oz beers. I think they've been worried they wouldn't sell because of the price. Hopefully my fellow beer geeks prove them wrong so they start picking up more of them!

    How Horizontalhood works:
    1) Some of my favorite beers have come from a brewery “Sampler” trade where I ask my trading partner to throw in a whole brewery’s lineup. If I didn’t do this, I would have only had Lunch, and not a tiny beautiful something. I might have only had Jai Alai and not Tocobaga. I night have only had Milller Lite and not MGD (just seeing if anyone is paying attention). So the purpose of this BIF is to showcase your local brewery’s line up and send something that wouldn’t normally be asked for. Show that your local brewery is not a one trick pony.
    2) The current holder of the Horizontalhood box will make a post in the Locals BIF thread saying that the signup period for the next Trip is open and will be open for 2 or 3 (or 9) days. Anyone that would like to be a potential target for the box would send their address information in a BM to the current holder of the box. To be eligible the person must have:
    a) participated in Locals BIF rounds 1, 2 (summer 6'er), 3, 4 (Winter 6’er), ACJ BIF or be one of the new faces (avatars) that have recently joined us prior to this Trips NBO post -- that's basically the guys (and gal) in the directory and about 3 or 4 others.
    b) have not already received the Horizontalhood box.
    3) After the signup period is over, the current holder will randomly pick the next lucky recipient of the Horizontalhood box. They will not announce this person nor the number of people that signed up, but instead will start posting hints as to where the box is going (BIF style hints). If no one signs up to be the next recipient then, as the original founder, @Clarkson will be the final recipient (hopefully without him knowing that it is coming to him).
    4) The holder of the Horizontalhood box will fill the box with high quality local bottles from A SINGLE LOCAL BREWERY ONLY, and ship it to the target. Make it a kickass box, but with this group of people I know we won't have to worry about that. Also, add the targets name to the tracking board in the box and add any 'decorations' that you wish to help commemorate the box's visit to your state. You may add one piece of swag in place of one beer, but it has to come from the brewery that is in the box.
    5) Once the box is received by the target, they will post the pr0n for all to enjoy.
    6) Start over at #1

    You do not have to enter every signup period. You can pick and choose when you want to be in consideration to be the next recipient. This would be nice if the current holder of the box is from your own state or an adjoining state or if you.
