Pale Ale Recipe Advice

    Brewing up this batch to enter into a competition this weekend would love any feedback on it. Originally had all the Mosaic hops at .75oz but thought that might be leaning too far towards IPA territory.

    5 Gallon
    40 IBUs
    1.55 OG

    80% Marris Otter
    15% Vienna
    5% Carapils

    .56oz Magnum 14.2% AA – 60 Mins
    .5oz Mosaic 12.8% AA – 10 Mins
    .5oz Mosaic 12.8% AA – 5 Mins
    .5oz Mosaic 12.8% AA – Whirlpool
    1oz Mosaic 12.8% AA – Dry Hop 5 Days

    I would up the dry hops to around 2- 2.5 oz for an APA especially using that fantasic Mosaic hop

    Thanks, I think i will up the dry hop. Debating upping the 5 min and whirlpool to .75oz

    I think the recipe looks pretty good as is. But the beer is not going to be ready to enter in a competition this weekend.

    Thanks, sorry didn't pick the best wording. Im brewing it this weekend for a competition at the end of July.

    I would not bother with the Vienna, but I like Maris Otter. Upon further review, I would probably drop the carapils as well, but I like Maris Otter :slight_smile:

    I'd step it back a little on the Mosiac. It's an amazing hop that's often used in excess. I think it's better complimented with some other hop flavors in the late boil. I'm drinking a over Mosiac hopped beer right now actually... It's delicious, but takes the special out of the hop.

    I'm going to be cliche here, and say that I would use some cascade along with it. Another great option would be Manderina Bavaria in the last ten minutes. It will ad some great complexity and much deliciousness!

    Too much of a great thing isn't necessarily a good thing.

    I'm big on MO too. I did a MO/Cascade smash about a year ago, it was an outstanding beer. If you do a 2-3 hour boil, you'll get flavors and colors that are simply awesome!

    What ratio did you do Mo/Cascade? Thinking of .25oz Mosaic and .50 cascade at 10,5,0 Mins

    This is all going to depend on the judges...
    If you get a judge who's benchmark is SNPA then leave the recipe alone. If you think the judge will look to zombie dust or new dogtown pale ale as the be all end all for APA then you better step up your hop additions.
    EDIT: my APA experiences in competition have involved 1.060 pils and munich based beers with about 2 oz of citra from 10 min to FO and another oz for dryhopping, with a BU/GU of about 75%. Wins every time.

    He meant that Marris Otter was the only malt and cascade the only hop, although cascade and mosaic do play together very nicely.

    I wasn't telling him to reduce the amount of hops in his recipe. I was referring to the amount of the one hop, Mosaic. It has a very distinctive flavor, and my personal preference is not to have that be the only flavor in the beer. It takes the special away from a very special hop. Again, this is just my opinion. Everyone does it differently. That's the beauty of homebrewing!
