Go to Brett Beer?

    They REALLY need to differentiate between Wilds and Bretts. I don't see how they're any more similar than wilds and lagers, or wilds and ales.

    They just started getting it at my local shop so I have a feeling it will be my go to this summer so freaking refreshing.:grinning:

    Orval, Rayon Vert, Sophie and Matilda. Just had Sofie and Matilda when I was in town two weeks ago (AZ) and bought extra bottles to leave at my sons house for my return. Sitting here sipping a Vert as I write this. Picked up a 4 pack at TW in Norfolk yesterday. This stuff is addictive!

    You're totally correct. Sofie is one of my go to Brett beers and the ones at one of my beers stores is from 2010 so the Brett has had a while to develop.

    Thanks for the great ideas everyone. Guess I need to start trading and get myself some Sanctification. Just for the brett people out there, my list of awesome brett brews:

    Orval (Supremely available if not always the best price)
    Rayon Vert (Mindblowingly great for the price, if only I could find a constant source of it. Guess I'll get a case when I head back to the city)
    Goose Island Sofie. (Less focused on Brett but the flavor is definitely there. This is just one of my favorite saisons overall.)

    I like it because the Brett is there, but muted compared to many in your face Brett beers out there. I don't want to drink something that smells like full-blown horseblanket-horsesphincter feces.

    If it was available, Sanctification. But if not, Rayon Vert doesnt disappoint. Oh wait thats gone too. dammit idk. I dont have Sofie available and hated Orval so im screwed. and I didnt like fresh Brux....

    Call me weird, but the horse blanket, barnyard thing is what has drawn me to these types of beers. I guess it was how could something that smelled like that taste that good? I gotta be in the mood but sometimes nothing else will do. (Maybe it was growing up with an Aunt and Uncle who owned a dairy farm....LOL)

    same with funky cheeses. I can only go so far with some of them, because then the smell starts to remind me nasty socks and worse.

    Orval is pretty much the epitome of the style. When I've accomplished something good I reward myself with an Orval.
    I just had my first Rayon Vert and I was absolutely underwhelmed, just like I was with Boulevard's Saison Brett. There was so little brett character in those beers I felt cheated. Matilda is basically Orval Lite, but not a bad beer. And I've had5 year old Matilda that wasn't half as "bretty" as a 1 year old Orval
    My other favorites have been some of my homebrewed brett beers. Right now I'm drinking a Belgian blonde with crabapples and brett added to secondary for 3 months, then kegged. Even after 3 months in the keg the brett is present only in the nose and the dryness.

    Saison Brett with a minimum of one year age on it. Just did a 3 year vert, fresh is completely different IMO. The older it is the more tart and funk.

    I don't like Brett brews. They smell like dirty sweat socks and dirty underwear was used to dry hop it per say. Yuck, if it smells like shit I can't drink it or eat it, the nose is a very powerful instrument.

    How would you differentiate them? Where would you draw the line since wild stands for wild yeast, which is for the most part Brettanomyces.

    Can anyone tell me what the hell went wrong with Brux? Did the Brett kill any shred of sourness?

    My favorite beers that have a very noticeable and substantial Brett funkiness to it are Green Flash Rayon Vert and Victory Helios.

    I do enjoy Sofie but the Brett flavors in that beer is often negligible to just barely perceivable (from draft beers). I have contemplated buying bottled Sofie and cellaring it to permit the Brett flavors to come out. Has anybody done this? How long do you need to age it for the Brett flavors to come out?
