5 gal Rumble barrel. Fill suggestions needed!

    Bought a 5gal barrel from Adventures in Homebrewing. Barrel was previously filled with Balcones Rumble (http://balconesdistilling.com/rumble).

    Leaning towards brewing an Old Ale to fill it with, was curious if anyone else had suggestions or had tasted Rumble?

    I'm getting one of these barrels as well (and one that had been filled with their whiskey). I'm thinking of going with a quad: pale, CaraMunich, dark candi syrup, touch of carafa. Old Ale sounds like a good choice as well, anything that figs, honey, and demarara would play well with.

    Rumble is awesome. Rum-like spirit with honey and figs.

    An Old Ale would be a good fit. I wouldn't go with anything too dark, as the flavor is a little delicate to compete with a lot of dark malt.

    Old Ale should go well with the profiles I am reading of the spirit that came out of these barrels. Other thoughts might be something Belgian, like a dubbel. Or, a big porter might play nice with the fig characteristics (edit, maybe not after reading Danielbt's post).

    I did both for my RIS and it turned out great, especially in a 28+ยบ beer. I used just D-180 on my last Old Ale and it carried through nice plum and fig flavors but it ended up with a thinner than desired mouthfeel.

    Just curious about the condition of the keg. Basically how long before it dries out?

    The keg came fairly dry, was emptied on 6/21. Filled with water and potassium metabisulfite to keep the barrel wet. Also have a bottle of rumble on the way, planning to pour that into the barrel and slosh it around a day or so then drain before adding the beer.

    Thanks. Thinking about it, I assume that they have to dump what ever spirit is in the barrel. And if they dump it and one fills it with water, how much of the original spirit flavor is left?

    Looks like the whiskey are the only ones left. I might get one.

    A lot. With my cab barrels, even after 1-3 months filled with water the beer I've put in the barrels have been very cabernet forward and oaky (15.5 gallon barrels).
