    Below is how Stan Hieronymus described Ella in his book For the Love of Hops:

    “Bold but not in a tropical way, sweet and floral, with lemon, apricot and melon.”

    There you go. I would note that it has a certain spiciness to it as well, but it's got a hell of a lot going on, for sure.

    I'd love to see a Dorothy-style saison dry hopped with some Ella.

    According to More Beer, Ella hops will provide varying qualities depending upon how it is utilized in the brewing process:

    “Ella Hops:

    This Australian superstar was bred from a mix of Spalt and triploid hops and is a sister to the Galaxy hop. First commercially released around 2007, Ella hops are best known for their high oil levels and varied character they offer to your brew at different stages and amounts. Ella can give off a very spicy, earthy, almost anise like aroma in a boil and provides a bright, tropical fruit and citrus scent when dry hopped. These aromatic qualities work best in styles like Lagers, Pilsners, and IPAs. A high alpha acid range of 13% to 16% is overshadowed by the very oily composition of Ella hops, letting the plethora of aromas go to work. Finding a substitution for Ella hops really depends on when you intend to use them in your brew. If you’re looking for that spicy aroma, try Delta or Cashmere hops, but go for a fruity hop like Citra if dry hopping. Taste Ella hops in commercial brews like Schlafly Hop Trial APA from St. Louis Brewery.”

    In a perfect world, it would be HBC-431 or whatever it's called currently. That HBC-431 DIPA Flying Dog put out a while back was just fantastic, and that beer alone was enough to convince me it should explode in popularity.

    azacca seems to be on the rise lately, but Meridian sound pretty cool and ive yet to see them showcased in a quality brew..."A brand new hop with crisp flavors of lemon, mixed berry, and tropical fruit. The really unique thing about this hop that commercial brewers are reporting, is that when used with other hops Meridian pushes and complements the flavor of those hops in unique and interesting ways"

    Azacca is a great contender, as is Motueka - both seem to provide a tropical-lemon flavor, with various other herbal/fruit qualities.

    Ron Mexico is also somewhat hard to describe, as it has some of those wild neomexicanus things going on. The NHC commorative beer was very good. There may be some for sale in the homebrew trade this year. Not many acres yet, though.

    Equinox was what I was going to say when I clicked the thread. More acres for this one, but has big breweries with big contracts for it.

    Jarrylo is another out there with some buzz, but I don't know if it will take off.

    Caliente was one that I had positive reaction to in a guys homebrew, hard to find.

    Mosaic is #1 for me, with Galaxy a surprisingly close second.

    Jeff, I have only had one commercial beer that featured Jarrlyo so far and I was not a fan of that beer. I suppose I should give that hop some more tries.

    I am looking forward to brewing my Equinox IPA in another month or so.
