Aging and putting a beer in a barrel is costly. Beer that could be sold to help pay employees, bank loans, rent/mortgage payments, barrels, ingedients is being held back. Not every brewery can do that and stay afloat.

Love me some abominable! Killer brewery right on the water. Def will bring Texas beer when I'm up there next Spring.

If money is that tight then they might as well fold up shop. I don't think it is though. I think you're overestimating the cost. What is your guess on the cost of a bourbon/whiskey barrel? How much then for the 50 gallons of beer that goes in there? Add in some maintenance cost for the aging process and what's the final tally? It's not a number that a somewhat established brewery should have to worry about. The excitement and anticipation (assuming it's aged properly) would more than make up for any additional costs. They'd be selling the final product at their taproom so they'd make the most bang for their buck. I'd love to see all the different Temptress versions along with experimental ones put in barrels (2-3 barrels of each for example). I know they've done some of them before but why not do all of them throughout the year at different times? This seems like a common sense, low risk idea that could help set them apart from the rest of the pack.

By my estimation, 50 gallons of Temptress would account for about $4000 of frozen revenue. That's a pretty big number for any small business, no matter how established you are. And I think we all know that barrel-aging beer is not a "low risk" endeavor. There are breweries that are far more established than Lakewood that can attest to that.

I think Lakewood already does things like this for their taproom. They don't do all of the Temptress variants at once, but mix it up a bit with casks, etc. Or at least I think they do. Most craft breweries do this these days.

I agree with you that most craft breweries do this these days. The point is that most in the DFW area don't or don't do it very often that I'm aware of. I moved here recently from the Midwest and this was common practice there, from the bigger craft breweries to the smaller craft breweries (ones much smaller and much less established than many in DFW). I assumed if they could do it then most places around he could and would. That's the part that is surprising to me.

You're revenue is still higher on a lot of other beers that don't go into barrels. Maybe they don't want to take on the time and storage space for a lot of barrel aging. What ever their reasons are I'm sure they have them. Barrel maintainince is a lot more then just putting a beer in a barrel and leaving it until you're ready to bottle.
