star anise in a stout - how much?

    anyone know how much to use to get a noticeable licorice flavour in a stout?
    was thinking 1 whole piece/star per 5 gallons

    Brewer's licorice - 1/2 stick in the boil.

    haven't seen it in Toronto, and seeing that it is a long weekend, it won't work for tomorrow

    Not much at all. You don't want to be drinking Jegger. I'd be doing this post boil.

    i'm brewing a tiger tail milk stout. so, licorice and orange. perhaps i'll put it in with 10 min left in boil

    I'd probably go with a tincture using vodka as the medium. Then after fermentation add to get the amount of flavor you want. It may take some sampling to get the right mix but you'd be able to dial it in a bit better.

    It might be a spice that I'm sensitive to, but I would do a KO addition. If I did a boil addition, it would be 2 or 3 arms, a sanitized taste after cooling, and an addition after high krausen.

    Gordon Strong's chai spiced brown ale uses 1 star per 5 gal according to an online source. I patterned a chai-spiced mead from this recipe and thought the spicing was great. For my mead, I added spices to primary fermenter. Because there are other spices present, the anise does not necessarily carry the spice mixture, but it is prominent component. I'd start with 1-2 in primary, and you can always add a tincture to taste at packaging if this doesn't do it.

    so i ended up tossing in one whole star at 30 min. my friend protested at my desire to add the star at 20 or 15 min. so 30 it was.
    at the end, he was complaining that there was little noticeable anise smell to the wort. i could smell it, but then his wife came by. she smelled it and said zero anise. my wife said the same.
    either i have a good nose, or they're wrong. so we'll see post-fermentation.

    By adding early, you probably got less flavor/aroma than you otherwise would have.

    Ever notice a lack of hop flavor and aroma with a 30 minute hop addition VS a flameout/hop stand/ dry hop addition ?

    Why would star anise be any different?

    I've used 2 ground up at flameout and it was fine for my taste.

    None. Ugh. Magic Hat's Starlit Star Anise Porter has turned me off to the concept entirely.
