Pellicle after 2 weeks on Cocoa Nibs

    Cocoa powder tastes like a cheap chocolate cake made from a box minus the icing. Nibs taste like chocolate. Don't fear the fat.

    I have medals and ribbons that say otherwise.

    They sure do. And honestly I would rather eat a handful of nibs than a spoonful of powder.

    I don't fear it, but I don't like the way it kills foam retention.

    I do, because of the foam retention issue. If I didn't care about that, I would use nibs.

    hmmm...never dealt with everclear before. Wonder if I can even get it around here. Koopa, what is your generally timeframe to get the extraction you're looking for with everclear? I used to do just a month...but realized it didn't start to really extract good aromas until like 6 months.

    Psh, you are all doing it wrong. Dark rum is the way to do tinctures.
