Early results with Wallonian Farmhouse

    So I brewed a saison with Wallonian Farmhouse, AKA: Fantome, from The Yeast Bay for the first time. I have never had a Fantome beer before. I was shocked when I took a sip of the yeast starter because it tasted exactly like purple grape soda. Today I bottled it up and the beer is pretty much the same. Purple grape soda. I'll give it a few weeks and try it and see what's going on.

    Anyone have their beer made with that yeast taste grape-y like this? Is there something wrong with mine, or is this what I should be expecting?

    Fantome has more than one yeast. I've used wy3725 and Omega Where da Funk. Both have strains from Fantome and neither were grapey.

    Did you use Castle Pilsner malt by chance?

    My simple recipe to see what the yeast was like:

    10lbs pilsner, not sure of the source
    1lb flaked wheat
    1lb flaked oats

    mashed @ 154 for 1hr

    added 1lb sugar at start of the boil

    1oz Saaz @60
    1oz Hallertaur @30
    1oz Saaz @5

    1L built up starter of The Yeast Bay Wallonian Farmhouse(crashed and decanted), pitched at 65F and placed into a 68F room. I wrapped the fermentor in towels until fermentation was complete OG 1.062, FG 1.000.

    Bottled with 3/4 cup of sugar boiled with 2 cups water.

    No off flavors, just a big dominant grape flavor.

    I have some RVA yeastlabs ghost ale (Fantome also) i'm using soon, which supposedly throws strawberry flavors. That sounds good, grape not so much.

    I used wy3725 a few times, and I got grape soda every time. I know I've posted this before when the topic came up. Not my favorite, but everybody's palate is different. Could just be that only me and @Beerswimmer pick this up.

    I get strong grape flavors from many beers with large percentages of Munich malts.

    OP didn't use any Munich
