What IPA should I make next?

    Get your first dry hop dose in there on day 3 or 4 of primary fermentation as suggested earlier. Really makes a different IMO. Then you can rack on to your 2nd dose of hops in a purged keg on say day 10. Should be done with primary for sure by then and you're into your keg sooner. Then you just have to decide if you want to leave it in there for serving or transfer to another. Some are sensitive to prolonged hop exposure. I am not. I just hang them high and drink it down fast enough to get the hops out of the beer within a couple of weeks.

    I don't have any good dry-hopping bags, so for this batch my plan is to just dump them in the carboy. Do you think it would still be worth splitting them up into two additions?

    Yes. I've done 2 in primary before with good results. One after day 3 and another after day 7. Transferred after day 11. That way I was not too much over 7 days exposure on the first dose. 4 days is enough for the second dose extraction.

    All right, I might try that. One of my goals is to get this one drinkable in short order, so cutting the primary down to 11 days will save me a bit of time. And since I'm kegging, it isn't the end of the world if the gravity isn't 100% final when I package it. Fermentation seems to be pretty healthy right now, so I imagine it'll be ready by then anyway.
