What's everyone drinking over the holidays?

    I'm breaking out a Corsendonk Pater 3L from 2001 for Christmas Eve. This is going to be really good or really bad... Will post the results later.

    Haven't decided on Christmas Day drinks yet.

    not yet decided about everything, but we'll finish with a zombinator vintage.. not mutch difference between that and whiskey :astonished:

    The Pater was amazing. Lots of wine character and no noticeable oxidation.

    Had 2 year old Bush Noel and 3F Framboos yesterday. Was planning on opening some big stouts after dinner but wound up in a food coma instead.

    I'm actually in Thailand so my Christmas beer was a Singha, but had a couple pre-Christmas seasonal dinners at home and had two of the classic Christmas brews, from Corsendonk and Caulier. Probably the best offering from either house.

    I've always really liked Corsendonk Christmas. Nice choice. The glass for that beer, while simple, is really cool too.

    Any recent comparable in your flavor memory? Just wondering about the aging factor. I'm jumping on your phrase "wine character" because that is often a standout effect of aging big Belgian brunes.

    I know "wine character" is quite generic, but that was the term used by everyone who tried it. Now that I think about it, the Pater shared many characteristics of a Rochefort 8. Fig, plum, dates, raisin. Had a long, wonderful finish. The color was clear amber but the last 1/3 of the bottle poured muddy light brown. What blew me away was that there was no oxidation and it retained a decent head. I bought mine from a gentleman in Antwerp who was selling off his entire cellar. I was going to buy some other bottles from him but t' Antwerps Bierhuyske beat me to it. They planned on keeping the Pater for decoration. You should stop in there and advise them to crack it open and give you a taste:grinning:
    Please post your thoughts on the Carolus. I miss having easy and inexpensive access to their beers.

    had a paper plane as a pre-night cocktail, then 1 cL of C-DOS after that to give me energy.

    If this ISN'T a joke, don't tell me.

    I forgot to confess above that I also tried to mull a Corsendonk Christmas with cinnamon, clove, some other spices, and not nearly enough sugar. I think I did 3 tablespoons of brown sugar with a bottle. Had to stir in a couple more to make it palatable. Should've done 70. Don't judge a man by one foolish act. Next time, a sweet blond with the above plus a heap of clementine peel.
