Thoughts on my uber simple american wheat ale recipe?

    I was going to ferment with US-05 and mash at 151 degrees.

    60% white wheat malt
    40% german pilsner malt
    Perle to 11 IBUs

    I am looking for a simple base beer to rack over muscadines in the fall so i am giving this a go

    For this type of experiment, I usually just go with wheat DME.

    You could consider a maltier base beer for fruit. Maybe something as easy as raising mash temp. When the fruit sugar ferments out it can leave it a little thin. Maybe a touch of aromatic or melanoiden malt. Just spit balling.

    Definitely. Also because it is good. And because I wonder whether you could would taste the difference. I guess I never did it side by side, but straight wheat extract has been a go to for me for hefeweizen and Berliner Weiss, and has always worked well. Why not for an American wheat? I'm guessing that any gains to be made by using a high quality pils malt are offset by the fruit addition.

    I would go for another 5 IBUs. Without much yeast character, that beer is going to taste like water without a little more hop flavor.

    So you're saying it will taste like macro" I wanted a really light beer for this one
